• 30 ml Sweet Vermouth

1 sugar cube
4 dashes Angostura Aromatic Bitters
15 ml Bourbon Whiskey
Top up with Brut Champagne / Sparkling Wine

Method:

Place sugar cube in a chilled flute
Saturate with Angostura bitters
Add bourbon whiskey

Glass:
Old Fashioned (on ice)

Ingredients:
• 45 ml Amaretto
• 22.5 ml Cask-strength Bourbon
• 30 ml Fresh Lemon Juice
• 5 ml Rich Simple Syrup (2:1)
• 15 ml Egg White (or aquafaba)

Method:
1. Dry shake (no ice) to emulsify the egg white
2. Add ice and shake hard until chilled
3. Strain over fresh ice in an Old Fashioned glass

Garnish:
• Lemon twist
• Brandied cherry

Glass:
Coupe / Nick & Nora (or Old Fashioned over ice)

Ingredients:
• 30 ml Scotch Whisky
• 30 ml Dry Vermouth
• 15 ml Cynar
• 15 ml St-Germain Elderflower Liqueur

Method:
1. Add all ingredients into a mixing glass with ice
2. Stir well until properly chilled and diluted
3. Strain into a chilled glass (or over a large cube)

Garnish:
• Orange peel (express oils over the drink)

Coupe / Nick & Nora

Ingredients:
• 45 ml Rye Whiskey
• 22.5 ml Dry Vermouth
• 22.5 ml Fresh Pineapple Juice

Method:
1. Add all ingredients into a shaker with ice
2. Shake hard (to create light foam from pineapple)
3. Double strain into a chilled glass
