Marinating longer doesn’t mean better. 🥩

If your marinade contains vinegar, citrus, ginger, kiwi, or other acidic and enzymatic ingredients, leaving your meat in it for too long can actually work against you. For marinades without these ingredients, you can generally marinate for 1 to 8 hours. Add acidic or enzymatic ingredients, and around 3 hours is usually enough. After that, you get diminishing returns and risk turning the surface of the meat mushy.

The trick isn’t more time. It’s knowing what you’re putting in the marinade.
