1 cup all purpose flour
1 cup cassava flour
2 tbsp. annatto seeds
(soaked in 2 tbsp. hot water)
1 1/2 cup brown sugar
3 cups water
1 tbsp. lye water
cheese or grated coconut (for toppings)

Soak annatto seeds or annato powder with 2 tbsp hot water.
Strain and set the colored water aside.
In a mixing bowl, combine all purpose flour, cassava flour and brown sugar. Mix well then Add water while mixing.
Add annatto water mixture and lye water. Mix well. Strain to remove impurities and lumps.
Then put mixture on each molds.

STEAM 10-15 minutes, LOW HEAT
