What’s better than a Thermomix? A Thermomix with TWO bowls! 🤩🤩

Well I wasn’t going to include this recipe in my top 7, but it is the one Mr 9 has decided he’ll make for World Teachers Day, so I figured I should!! 🍋

Sugar cookies and lemon curd are both super easy to make in your Thermomix and are equally as delicious! A match made in heaven!!

My boys (5 & 9) loved juicing the lemons for this recipe, and Joel (9) can easily make both elements on his own which I love!! There’s no way I’d let him make something like lemon curd on the stove, but the Thermomix makes it so easy and safe.

As you can tell by the picture these biscuits are mainly promoted as Easter cookies, but obviously you can make them into whatever shape you like!! We will be shaping, baking and assembling these tomorrow after school, so I’ll post a pic once we’ve finished. Joel wants to use a star cookie cutter and we’ll use a little spring-loaded fondant cutter to cut out the hole in the top biscuit. If you don’t have one of these I’m sure you’ll be able to find something suitable in your home! Joel actually also thought of using an apple corer, which I thought was a great idea!! 💡

I also had heaps of lemons so decided to use a different recipe for the lemon curd so I could make HEEEEAPS! 😋 If you want to do this, here’s the recipe I used for that: https://cookidoo.com.au/recipes/recipe/en-AU/r548589 It makes 1.3L of curd! 🤩🤩

I’m not sure the best way to present these yet, but I reckon Joel might want to use one of those brown zip-seal gift bags with the little clean window. 🥰 I’d love to find gift boxes like this, but the only ones I’ve found are very obviously Christmas ones… Please let me know if you’ve seen any like this!!

Well it’s Day 4 and I didn’t want to leave out the health conscious teacher! 🍎 This granola is super easy to make, takes only one minute of active time, (the Thermomix making light work of chopping the whole nuts and seeds for you) and then 15-20 minutes to bake in the oven for that beautiful toasted flavour. 😋

This is something that you can present beautifully for that real wow factor - imagine a gorgeous preserving jar or clip top jar, with a big, round ‘thank you’ sticker on the front. A nice, sophisticated ribbon around the top of the jar giving it that special touch.

I found a lovely jar at Getta Bargain at Blackwood today, I’ll put a photo in the comments. I bought it to use for my own granola but it would make a nice gifting jar, too.

The only thing about giving something with nuts is that you probably want to check to make sure your teacher doesn’t have anyone in the home with a nut allergy.

Now the warmer weather is here I’m going back to granola, home made yoghurt and fresh strawberries for breakkies - im sure your child’s teacher would appreciate some gorgeous home made granola for something different, too. ☺️

Biscoff is so trendy right now!! I can only imagine how amazing this spread would be on toast! 🤤

I haven’t made this myself yet but it’s in my Cookidoo menu planner for the weekend! Especially because Biscoff biscuits are on sale at Woolworths and because I had an amazing Biscoff ice cream at Saint Louis on the weekend! 😋

As per the photo you’d want to present this spread in a nice jar, readily available at most cheap shops, including Getta Bargain at Blackwood. My top tip is to sterilise the jar for longevity of the contents, by filling it with boiling water for a few minutes and then allowing to dry completely before filling.

Your child’s teacher will love the fact that this gift keeps on giving, as this spread would keep in the fridge for weeks.

Wrap in cellophane or simply tie a nice ribbon around the jar and attach your hanging gift tag with your lovely thank you note and ingredient list on the back. ❤️

🍫 Miss 12 chose these as her favourite gift to make. Decadent and chewy, a double batch of these is definitely required, or they’d all get demolished before they made it to their recipient!

Prep time is only 5 minutes, which means these morsels of amazingness are quick and easy enough for the kids to make (with your supervision for the littlies, of course).

My top tip for making these would be follow the instructions exactly when placing dollops of mixture onto the trays. Don’t spread or squash them at all before baking, or they will spread out too much and be really thin.

My favourite way to present cookies is to make a hard cardboard cutout about the size of a biscuit, and stack the biscuits on top of one another. Use cellophane or a special cookie gift bag, and tie at the top. Of course, a hanging gift tag will finish it off and enable you to write your super special thank you message. As always, it’s a great idea to list the ingredients on the back of the tag. 👍🏻

🍋 With only 4 ingredients, this slice is one of the most delicious lemon slices I’ve ever tasted! And although everyone loves chocolate, I feel like lemon is a bit more of an “adult” flavour to give as a gift, and that’s why it’s my first choice for World Teacher’s Day! It’s the one my son’s teachers will be getting this year!

It was actually a customer who first introduced me to this recipe, thank you Melissa Yates! Even though it can be a bit fiddly peeling the lemon, the Thermomix makes it easy to create rind because we simply blitz it up with the sugar! My tip here, is make sure you get yourself in a good, sharp peeler. A super sharp blade will slice through the rind effortlessly without collecting any of the white pith. Peeler’s aren’t expensive, and a worthwhile investment in my opinion for anyone who uses them for citrus peel. I use the Tovolo Precision Peeler from Minimax but I hear the Sharple peeler from The Mix Shop is absolutely amazing: https://thermomix.com.au/products/sharple-food-peeler-black

This slice is an absolute flavour bomb, but don’t be scared to add extra rind if you want to achieve a really big lemon hit!

To present your slice, have your kid decorate the edges of a paper plate, place 4 slices of your Lemon Slice on the plate and wrap it in cellophane with a yellow ribbon, and a hanging “thank you” gift tag. Super cute!! (I always like to list the ingredients on the back of the tag as well.)

Everyone who knows me knows I LOVE making gifts in my Thermomix. ☺️

Has anyone seen the new Cookidoo Collection? It’s called “Chef Favourites”, and this is the Caramel and Macadamia Cheesecake by Brett McGregor. It was deeeish!! A light, not sickly rich or super sweet cheesecake, with a delicious caramel sauce and caramel macadamias.

The recipe actually had a traditional stovetop caramel sauce, but I had a bit of an issue because my saucepans are rubbish (hardly ever use them nowadays!), so I made the caramel sauce in the Thermie and it was perfect. 😋

Happy birthday to my gorgeous sister in law Amy who is 27 again. 😜❤️💐🎂

Yummmm! 😋 Creamy chicken & sun-dried tomato pasta for dinner tonight! Day 1 of my weekly meal plan: done in 3 minutes, earlier today! 😜 Thanks Cookidoo!

This dinner is always a family favourite - even for my boys who hate tomato! (Shhh don’t tell them!) Quick and easy, not many guided cooking steps on the touchscreen, and easy to make by omitting the chicken or cook in the varoma using a trivet.

I invite you to check out the second and third photos… the first is all the main ingredients in the Thermomix bowl ready to blitz up. Basil, parsley, garlic, onion, sundried tomato, chilli (I used capsicum) and sundried tomatoes. The third photo is the result of the Thermomix chopping these ingredients for just 5 seconds!! Yep! 5 seconds! Imagine how long that would have taken me by hand! 🤪 One of the many reasons I love my Thermomix.

The fourth photo I added for fun - always happy to open a bottle of wine for the sake of the family… 🤭🤭🤭
