A simple home cooked chickpea pilaf with mint raita (yoghurt dip) and tomato chutney fits all our rules. Naturally gluten free, this is simple to cook, packed with flavours and very satisfying.

In conjunction with MACSA - Muslim Australian Connections of South Australia, and Adelaide University Rotaract Club, we are sharing the recipe with all of you live at Adelaide Central Market on Thursday, 26th August at 14:30.

In this ever changing world, there is one thing that remains constant…. Our love for chai ❤️

It unites us like no other. And the evening tea in Pakistan is a must in every household. A time when families sit together after a day’s hard work and enjoy this beverage. In my childhood, the tea time at evening was not just chai but always with something extra…. biscuits, nimco, cake rusk… or a simple tea cake that you could dunk in or just enjoy on the side. Everyone who has had our Ideal Tea Cake says it takes them back to freshly baked bakery cakes…

Since we started making these, our evening tea time has become a little tea party.

Chow Mein is an important part of Pakistani/Indian-Chinese cooking or what we like to call lovingly, desi Chinese food. I think it is one of the most loved noodle dish. Basically, stir fried noodles with vegetables and meat (optional) and a delicious sauce which makes all the difference. We learned of this difference when Mrs and I used to live in Malaysia and we believed that Chow Mien was a dish we knew well but…….

While some countries enjoy a mild version of it, the variety in Malaysia has dark soy sauce giving it a sweet after taste; a flavour we acquired after a while.

Ours has a bit of tang and tad bit spice in it… giving it the comforting flavour and feel-at-home taste. I enjoy mine with heaps of chilli garlic sauce on the side while Mrs sprinkles some chilli flakes.

I also have very fond memories of eating this at my university's canteen. What about you?

Yesterday we posted a small video on our page story and asked you to guess what was cooking. Most of you guessed that it was chai but, some of you correctly guessed that it was not just chai but the gorgeous winter beverage, Kashmiri chai or Noon chai. We captured the beautiful moment when milk is added to the tea and it turns this stunning pink colour!

It is pink, yes! No, it is not artificial colour.

Not only that it has this distinctive colour, the original Kashmiri chai is salty with a hint of cardamom and garnished with almonds and pistachios. Originating from the beautiful valley of Kashmir, pink tea is an integral part of Pakistani winters. While in Kashmir it is made regularly and served with homemade bread and salted cookies, in Pakistan it is reserved for special occasions like family gatherings and weddings. We add sugar to it and lots of nuts.

The pink colour, aroma of cardamom, nutty taste, the blending of salt and sugar - it is no less than a little party in a cup and one that takes you back home to love filled slow and cosy winter nights ❤

Pakistani Chinese food is everyone’s favourite. Brought to Pakistan by Chinese migrants, liberal use of chicken stock and seasoning with a variety of tangy, sweet or spicy sauces is the trademark of this cuisine. The food evolved over time to retain the Chinese style of cooking but with a little Pakistani influence. The fusion is a pure delight.

Although popular all year, we love it especially during winters because we can then have it with a serving of warm soup. It makes winters a tad bit happier!

All the rain and cold weather the last whole week was a good reason to make warm soups but today we decided to have a hearty meal of Egg Fried Rice and Hakka style chicken…

A little spicy, a little tangy … leaving the heart and stomach … satisfied ♥️

We are a fan of dates. Ever since we started focusing on healthy eating, dates became a permanent feature in our fridge to take care of those odd cravings. In Ramazan, of course dates become a part of menu every single day. To try something different this year, we made these healthy date balls with almonds and coconut that are not only delicious and filling but also look great on our Iftar table.

Also, I feel these will now be a permanent feature in our stock of snacks after Ramazan. Stored in a jar, these will be perfect energy boosters for any day.

Tea time is very important in our home. We enjoy our evening tea immensely. In usual days, it is the time we both are relaxed, we unwind with a cup of tea and talk about our day. And it is always good to have 'a little something' with tea. Biscuit, cake or rusk.. a bite to enjoy that tea even more.

Spring roll is also one of our most loved tea time snack. It is from the desi Chinese cuisine (Pakistani variation of Chinese cuisine) that is much loved by everyone. Crunchy patty stuffed with vegetables and chicken, lightly seasoned with salt and pepper, warm and delicious, it is perfect with a hot cup of tea. During fasting month, having these in your freezer is a such a blessing for days when you are rushing through the day. These can be deep fried, shallow fried and even air fried for a guilt-free experience ;)

When we got married Mrs. told me that she did not know how to make rotis (flat bread) but she knew how to make parathas (pan fried flat bread) Well, I think that was even better because what is better than a home cooked paratha? Have it for breakfast, or lunch, or dinner … or just for teatime… you can never go wrong with a paratha.

But to make it all double the fun, we also have stuffed paratha; a complete meal or should I say a complete party. Be it vegetable stuffing or minced beef or chicken, there are ample of choices and it is a great way to utilise leftovers as well. So when there were left over mashed potatoes, I got invited to our little paratha party for lunch. The chill in the weather complimented the menu and we enjoyed ours with tamarind chutney and raita (yogurt dip)

Nan Khatai

Pakistani Shortbread cookies laced with cardamom. Crumbly and tender, these cookies are made with ghee and flour and they melt in the mouth. Sold at bakeries and sweet shops, these treats are perfect for teatime or just as a snack on its own. When we first moved out of Pakistan, my wife used to ask everyone to bring her bakery biscuits when they visit us and finding Nan Khatai in the mix was always a treat for us! We decided to make our own and these turned out so good that I think we will be needing a jar to store these all the time!

Very thankful to Adelaide Central Market for the opportunity to set up the first ever Pakistani Street Food pop up stall. It has been an absolute joy to introduce the food we love to everyone. We are blown away by all the appreciation, smiles and love we have received ❤️

As we get ready for our last week at the market, we are lucky to start it by celebrating Pakistan Day 🇵🇰🙌🏻

As we gear up for tomorrow, we just wanted to take a moment and THANK YOU all for an amazing response on our tiny venture! Drowned in love and appreciation, the past week has been nothing less than magical.

Met so many amazing people who were so generous not just with their appreciation of the food but the stall and presentation. Strangers offering help and asking about our well being gave us such a homely feeling that despite the exhaustion at the end of a very happening week, we miss being at the Adelaide Central Market on our day off!

We would also like to apologise to those who we could not serve because we were sold out. The response has been so great but the limitation of space only allows us to do so much. Both of us are trying our best ❤

Loving all the noise we are making with the reviews, tags, messages, shares… 🇵🇰

We use Unrefined Himalayan Pink Salt that comes all the way from Salt Ranges in Pakistan 🇵🇰. The salt is easily available in Coles.

There are a few entrances to central market. We are closest to the entrance from GROTE STREET. The first stall if you enter from the gate right in front of Her Majesty Theatre.

If you enter from the Gouger Street, we are right at the end of the market. Next to O Connell’s Meats and in front of Michael’s.

Ask for ‘Producer In Residence’ stall if asking for directions.

Adelaide Central Market’s parking is free for one hour. Market is also easily accessible via Tram.
