🥣 Ginger Garlic Chicken Rice Bowl
Tender chicken, fluffy jasmine rice, fresh ginger, garlic and broccolini in a light, flavour-packed broth.
Simple, nourishing and the perfect dinner to warm you from the inside out.
Serves 4
4 boneless skinless chicken thighs
1 tbsp sesame oil
4 tsp minced garlic
2 tbsp minced ginger
1.5L chicken stock
2 tbsp soy sauce
1 tbsp mirin (optional)
1 tsp sesame oil
1 bunch broccolini
2 cups cooked jasmine rice
To Serve
Spring onions
Sesame seeds
Chilli oil
Soft boiled egg (optional)
1. Heat the sesame oil in a large pot over medium-high heat.
2. Season the chicken thighs with salt and pepper, then sear for 3–4 minutes per side until beautifully golden.
3. Remove the chicken and set aside.
4. In the same pot, add the garlic and ginger and cook for 1 minute until fragrant.
5. Pour in the chicken stock, soy sauce, mirin and sesame oil.
6. Return the whole chicken thighs to the broth and simmer gently for 15–20 minutes, or until cooked through and tender.
7. Remove the chicken and allow it to rest for a couple of minutes before slicing.
8. Add the broccolini to the broth and cook for 2–3 minutes until just tender.
9. Divide warm jasmine rice between bowls.
10. Arrange the sliced chicken over the rice, add the broccolini, then ladle over the hot broth.
11. Finish with spring onions, sesame seeds and chilli oil.
