Veggie Risotto
Last night I wanted to use up some bits and pieces I had in the fridge so I decided to make a vegetable risotto and it was DELICIOUS!
There’s no real recipe as I kind of make things up as I go but here’s a rough idea if you want to try it!
And best of all, you can get all the ingredients from market 🍀

1 x carrot
1 x zucchini
1/4 pumpkin
Capsicum
Mushrooms
1 x onion
4 x cloves garlic
2 x tblspns Tomato paste
Oregano
1 x heaped tblspn Chicken stock (can use veggie stock if preferred)
1 x cup Rice

Blend up all the veggies apart from the onion. Finely dice the onion and brown in a pan. Add all the veggies and cook for 5 mins.
Add other ingredients with 2 x cups water and stir, let simmer for around 20/30 mins until rice is cooked. Keep checking it to see if you need to add any extra water.
My kids like it topped with some Parmesan, I like it just as it is 🌟

BEETROOT RECIPE
Veggie Fritters
This one is delicious and also very simple.
Grate one zucchini, a small beetroot and a large potato into a bowl then squeeze out the excess liquid.
Mix in two eggs, garlic, spring onions (optional), mixed/italian herbs and tapioca flour (enough to thicken the mixture).
Spoon mixture into pancake sized fritters and cook in ghee (or coconut/olive oil) in a frypan for around 5/10 mins each side.
You could also add some grated cheese if you eat dairy (my daughter won’t eat them unless there is a little cheese in them).
You can play around with the veggies and herbs you use.
You can make a big batch, cook them all up and keep in the fridge to reheat throughout the week 🙌

🌟 BEETROOT 🌟
This week I’m going to post some ideas and recipes on what you can do with beetroot!

Today I made this super simple and delicious beetroot salad. Simply grate beetroot and finely chop mint or coriander into a bowl. Add some olive oil and balsamic vinegar and mix all together. When serving, add some goats feta or halloumi along with a protein of your choice. Today I cooked up some marinated lamb to go with it.
Best of all, make a big batch of the salad and store in the fridge for two or three days. Couldn’t get much easier than that! Quick, easy and nutritious 👌

What a successful morning!
Today Alicia’s Organics travelled to One Tree Hill with some pre packed boxes for the locals to choose from.
We will back again next week on Monday morning from 11am - 12pm (or until boxes are sold out) at the local playground. Boxes will vary each week and we accept cash or bank transfer.
