100g Australian organic rolled oats
100g Australian peanut butter
100g organic rice malt syrup
10g Australian collagen peptides (optional)
60g Australian almond nut butter
60g sour dried cherries
100g dark chocolate couverture buttons
ᴍᴇᴛʜᴏᴅ
1. Add the rolled oats to a food processor and blend until finely ground.
2. Add peanut butter, rice malt syrup and collagen powder, then blend until well combined.
3. With slightly damp hands, roll the mixture into small balls and place each one into the wells of a silicone mini muffin tray. Press a small indentation into the centre of each ball.
4. In a food processor, blend the almond butter and dried cherries until smooth. Spoon small portions of the mixture and press them into the indentations of each oat base.
5. Spoon melted dark chocolate over the top of each bite, ensuring the filling is covered.
6. Place in the fridge until set.

1 tbsp organic matcha powder
80g caster sugar
Pinch of salt
60mL boiling water
180mL cream
250g gluten free coconut and vanilla pancake mix
250mL preferred milk
100g Keto macadamia and almond crunch granola
50g organic cacao nibs
150g Greek natural yoghurt
ᴍᴇᴛʜᴏᴅ
1. To make the matcha syrup: In a small bowl, whisk together matcha, sugar, salt and water until the sugar dissolves.
2. Heat the cream over low heat, then stir in the matcha mixture. Simmer for 10 minutes, stirring occasionally. Transfer to the fridge to cool and thicken.
3. To make the pancakes: In a bowl, whisk together pancake mix and milk until smooth, adjusting liquid to reach desired consistency. Let the batter stand for 10 minutes.
4. Heat a pan on low to medium heat and lightly grease it. Spoon dollops of batter into the pan and cook until small bubbles appear and pop. Flip and cook on the other side until golden.
5. Stack the pancakes and top with yoghurt, granola and cacao nibs. Drizzle with matcha syrup and enjoy!
