As I reflect on aging, I'm reminded that wrinkles tell a story of joy, laughter, and memories. In a world where perfection is often expected, I've strived to age with elegance at 50. I've cherished life's experiences that have inspired me to be happy and healthy, treating each day as a gift. Today, my husband celebrates my 50th birthday at , our go-to spot with attentive staff and exceptional cuisine.

The tasting menu included a range of dishes such as
Yellowfin tuna, native lime, radish & shiso;.
Two gulfs blue swimmer crab, cucumber, kohlrabi & roe.
Asparagus, smoked almonds, cured yolk & parsley.
Wild caught fish, tomato, kombu & ama ebi.
Jurassic quail, sweetcorn, chestnut mushrooms & mustard;.
Wagyu, shiitake, cavolo nero & black garlic.
Apricot, yoghurt & verbena -(palate cleanser)
Milk chocolate, honey & hazelnut.
Since September, I've been on a keto diet with great success, but sometimes you need to indulge, and it was worth it.

RECIPE ALERT 🚨

KETO CHEESE AND KALE CRACKERS 🚨

INGREDIENTS

1 1/4 cup blanched almond flour (not the same as almond meal)

1/4 tsp. baking soda
1/2 cup freshly grated cheddar cheese
1 1/2 T neutral-flavored oil
1 large egg
A handful of dried kale crunched up .

INSTRUCTIONS
1. If you store your almond flour in the freezer like I do, you’ll need to take it out and let come to room temperature for a few minutes before using in the recipe. Preheat oven to 170C.
2. Grate 1/2 cup cheddar cheese. In a medium-sized bowl, combine almond flour,baking soda and cheese dried kale crunched.
3. Add in egg and oil and mix till combined.(you can wet your hands and give it a good mix with your hand so if has formed a wet dough like consistency.
4. Cut two pieces of parchment paper the size of your baking sheet. Put one piece of parchment on cutting board and put dough on top, or half the dough if baking on small baking sheet. (I made the dough into the shape of the parchment.)
5. Put second piece of parchment on top of the dough and roll out with rolling pin until dough covers the parchment sheet. (It’s fairly important to roll it out the same thickness or the thinner pieces will burn.
6. Remove top parchment and cut dough into pieces 2 inches square. (A pizza cutter would be perfect for this if you have one.)
7. Slide the parchment with the cut dough onto baking sheet and bake crackers 12-15 minutes, or until lightly browned.
8. Let crackers cool on the baking sheet for 30 minutes.
9. Crackers will keep for a few days in a plastic container, if you can manage to keep them around that long!

These little bite size crackers are flavour bombs enjoy .

NOTE -
Also you can do these with out the dried kale crunched- I added some as I wanted a bit more of a savoury flavour as well as I had some on hand as I made Kale chips the night before .

YOU HAD ME AT KALE CHIPS 🥬

De steam the kale down the middle ,then rip the leaves pop it in a bowl .
Drizzle with oil paprika, garlic powder and one shake of salt.
Please it in the oven on 180 and watch them crisp up .
About 15mins .
Take out let cool then place in air tight containers.

Today lunch -

YUMMY COS LETTUCE WRAPS.

Ingredients

3 eggs
1 Spring onion, sliced
1 tomato chopped
2 small avocados diced
1 tablespoon of keto friendly mayo. Preferably plant based or egg based.
X4 cos leaves

Method
Boil the eggs till hard.
Let cool..
Peel and then chop eggs put in a bowl .
Add the diced avocado.
Add spring onion and a tablespoon of spoon of mayo lightly mix add salt and pepper to taste .
Spoon mix into the cos leave and sprinkle the tomatoes on top .
Now ready to eat yum .

Bio - Yep this mum has gradually noticed the neglect she’s been doing to herself.
It’s hard balancing children with certain needs that are beyond your knowledge but it’s also education and learning that is fundamental in raising a good family ..

Now there seems to be a light at the end of the tunnel of understanding. Our son’s journey.

I can now breath and hold myself responsible for decisions to be made for my own wellbeing eg
Eating the right things rather than indulging oneself.
Don’t get me wrong this can be done but in moderation

I’ll be loading this page with a few keto recipes for those that are interested.
While maintaining a boy house hold that needs lots of yummy food for them too .

LUMCH DATES

To day we are did an impromptu lunch catch up with some good friends.
We all meet at a local in Chatswood and because we know some good favourite spots .

Today it was in chatswood .
For some Malaysian food.

Menu
Roti canai -
Crispy on the outside, fluffy on the inside.Served with two curry dips and spicy sambal sauce.

Kari ayam -
Classic chicken curry cooked with freshly ground spices and chunky potatoes.

Kari ikan -
A tangy fish curry cooked with fresh tomatoes, okra and eggplant

Sambal udang -
Stir-fried tiger prawns with fiery sambal sauce

My favourite
Rojak -
A Malaysian-style salad. Prawn and coconut fritters, fried tofu, hard-boiled eggs, freshly shredded yambean and cucumber, topped with a thick spicy peanut sauce.

To Drink
Limau ais -
Fresh lime with syrup on ice.

ZESTY CRISPY LEMON CHICKEN. 🍋

Tonight while boys are at trainging .
I whipped up some twice cooked crispy chicken with a zesty lemon sauce.

Stem rice and everyone had two bowls so must of been good .

RECIPE ALERT 🚨
ULTIMATE Crunchy On The Outside, Gooey In The Centre Chocolate Chip Cookies

Ingredients
200 g soft light brown sugar
100 g caster sugar
225 g butter, soft
2 eggs, free range
360 g self-raising flour
1 tsp bicarbonate of soda
Pinch of salt
150g Chocolate chips
11 pieces of Chocolate Dairy Milk chopped
100 g hazelnuts or other nuts (optional)

Method
1. Once you’re happy with the sugar and butter mix, beat in the eggs, one at a time and until fully combined.
2.Sieve the dry ingredients (the flour, bicarbonate and salt) and add to the cookie mixture. Mix until combined.
3.Mix in chocolate chips ,
but don’t over-beat at this stage, this could make your cookies tough.
4. Roll into 90gram balls put a hole in the center then stuff
5. Chopped chocolate in the middle and cover the whole .
6. Spoon the mixture onto a plate (you could place them directly onto the lined baking tray, just make sure it will fit in the freezer), making 12 ‘balls’ – don’t push them down or try to shape them at all, if the cookie mixture is tall now it’ll help the cookies keep some height when they’re baked.
7. Put the cookie dough balls in the freezer for a minimum of one hour.
8. When you’re ready to bake - once the cookie dough is well and truly chilled (or even better, frozen) - pre-heat your oven to 180°C (356°F) if it’s fan-assisted, or 190°C (374°F) if it’s a conventional oven.
9. Place the frozen cookie dough balls onto a baking sheet lined with tin foil (baking parchment will do, too, but I find that the tin foil gives me better results). The cookies should be at least 1.5 inches apart – they’ll need space to spread. If your tray doesn’t fit them all comfortably, keep half of the cookies in the freezer and cook in two batches.
10. Bake the cookies for 12-14 minutes, 12 for a cookie that is still quite soft in the middle once cooled, or 14 if you’d like them a little more crispy. Take them out of the oven and leave to rest on the baking tray for another 15 minutes. They will be very squidgy and soft when you take them out of the oven So take care– this is okay, they’ll set as they cool, and hold their shape but keep a gooey centre.

The days go by so fast and weekends become so busy with kid sports .

Today we made it a point to catch up with a quick lunch date

Not all dates need to be fancy .
I am so thankyou for the connection a simple lunch can offer with good conversation.

Beautiful salmon teriyaki with steamed rice and a fresh salad with a fruity dressing and a few lotus fries to add some crunch .

GET A BOWL ON PHO TO WARM YOUR SOUL .

Today’s lunch spot was an old time favourite.
We visited in chatswood .

- Grilled chicken with a big bowl of chicken pho and rice noodles .
This was a big bowl of full flavoured chicken broth with a slight sweet taste .
The softest of rice noodles and lots of herbs and a sprinkle of dried onions .
Side of grilled chicken and sweet dipping sauce.

- Beef Pho and had lots of delicious sides to add to her soup bean sprouts mint leaves herbs chilli.

We both rolled out the door .
Next time think we share .

The staff were really lovely and attentive and helped me with my choice today. Perfect place to go on a rainy Sydney day.

Lunch with two very lovely ladies and a wee sneaky drink .merivale

Antipasti

- Wood-fired bread
- Tomato with basil and olive oil
- Burrata
- Prosciutto, 18mo

Main

- Lamb backstrap, mustard butter, rocket
- Ziti alla vodka, prawn, lobster, chilli
- Gnocchetti, prawn, garlic shoot, prosciutto

And of course a sneaky glass of prosecco. 🥂

It was quite a fast turn around with service and food arriving.
Fresh fast flavours that hit the mark in every mouthful.
