This Monday we're brewing a single origin from Peru, the country where our roaster Karla was born. We've been hunting for the right beans to build a blend (or keep as an S.O.) that honours where she's from, and this week we're putting one of the contenders on the machine.

The Green Bean Adventure

These little green beans didn't just walk to Beechworth-they've been on a full-blown backpacking adventure, starting their life in the sun-drenched fields of Central/South America and Africa before finally hitching a ride into your cup.

My main takeaway from working with them? All the delicious flavour profiles are sorted out long before they meet the roaster. The way they're processed determines their entire personality:

*Washed beans- are the high-energy, meticulously clean ones-they bring a crisp clarity and bright, zingy notes.
*Natural beans- are the sweet, chill and slightly messy ones who dried off inside their fruit shell-they deliver big, fruity sweetness and a heavy body.

So, when they finally hit our roaster, their character is already locked in. At Beechworth Coffee Roasters, we see our job as respecting that whole journey, just gently developing the body and balance to make sure they shine.
