Throwing it back to one of Soyco’s most-loved recipes 👉 Shaved Tofu Pita Wraps by the wonderful Tess Begg.
Combine a fluffy pita with garlic tahini sauce, fresh parsley salad, shaved tofu, and tangy pickled onion for a delicious, high-protein lunch!

TOFU:
350g Soyco Firm Tofu
1 tsp garlic powder
1 tsp onion powder
1.5 tsp smoked paprika
2 tsp dried parsley
1 tsp ground cumin
Pinch of salt and pepper
1.5 tbsp low-sodium soy sauce or an all-purpose soy seasoning
1 tbsp olive oil, plus more for pan frying as needed
1 tbsp maple syrup or coconut aminos
GARLIC TAHINI SAUCE:
3/4 cup plain coconut or soy yogurt
1.5 tbsp hulled tahini
Pinch of salt
Juice from 1/2 lemon
1 tsp garlic powder or 1 garlic clove crushed
SALAD:
1 small red onion, finely diced
1 bunch of parsley, finely chopped (roughly 2 cups chopped)
1 cucumber, finely diced
1 large tomato, finely diced
Juice from 1 small lemon
1 tsp olive oil
Pinch of salt
OTHER:
Pita bread
Pickled red onion
METHOD:
1. Using a vegetable peeler, peel the tofu to create thin strips. Add to a large container along with the seasonings, and give it a shake (you can also toss with your hands in a large bowl).
2. Heat a frypan over high heat and add a dash of oil. Add the tofu and cook until lightly golden, tossing occasionally. Alternatively, bake the tofu in a pre-heated oven at 200°C for 20-30 minutes (air frying should work too).
3. Combine the sauce ingredients in a bowl. Toss the salad ingredients together in a large bowl.
4. Heat the pita in the microwave or pan to soften. Add the sauce, tofu, salad and pickled onion. Fold up and enjoy.
