sent me a little sample pack of their new rub (yet to be named!). It was delicious on some rump steak but I think it would also be amazing on pork ribs. It had a little heat but not overpowering and its just packed with moreish flavour. Can’t wait to find out what this new one will be called…

A Sweet Potato Odyssey

A perfect side to any dish.

Place sweet potatoes on a tray and bake in an oven at 180c for an hour or until soft on the inside.

While this is cooking, dice up some bacon from and cook in a pan until brown and slightly crispy.

Remove potatoes from oven and let cool down enough to touch. Once cooled, cut potatoes down the middle and scoop out the potato and add to a bowl leaving the skins.

Add bacon to potatoes with shallots, 2 tbs of sour cream, a cup of grated cheese and The Weekend Blend spice mix. I found this rub has a real Smokey flavour that elevates the dish.

Mix together well and season with salt and pepper.

Now it’s time to fill your potatoes with the mixture. Be gentle so you don’t break the skins. If you do, it’s ok, it’ll still keep together when baking.

Top potatoes with cheese and bake at 170c until cooked and cheese has melted. Top with sour cream, shallots and sprinkle some of the Weekend Rub on top.

Absolutely amazing and will go great with heaps of meals.

Hot and fast pork ribs from

These bad boys came pre-marinated and a Smokey BBQ sauce. I cooked on the Genesis hot and fast. Then placed on a tray with some beer and beef stock and covered with foil and cooked in the oven for an hour or so. They literally fell off the bone.

Served with loaded sweet potatoes with bacon, cheese and chives and seasoned with the weekend blend rub.

Served up on board.

It's a good time to have dessert for BBQ.

We created The Sugar & Spice Blend because the world needs a Dessert blend to bring something sweet to the BBQ.

Apple crumble 🍏

Stew some apples (or you can use canned apples if you’re short on time)
Put apples in a casserole dish and sprinkle with a generous amount of sugar n spice blend. Then cover with crumble and cook on 450F for 15-20 minutes until golden.
Crumble:
80g butter cubed
1/2 cup plain flour
1/2 cup caster sugar
1/2 cup rolled oats
1/4 cup almond meal (optional but gives a nice flavour)
Mix together with fingers to form bread crumb like consistency (you may have to add a little extra butter if crumble mixture is too dry)

There are no mistakes in BBQ, only way to discover new flavour.
you have add a flavour bomb to these rib using our beautifully blend.

After a terrible start these ribs turned out great. Rubbed with the One Eighty Blend from and then glazed with the delicious Pomegranate Habanero Jungle Juice from . I’ll have to get some more Jungle Juice it’s delicious… just need to be less clumsy next time and not break the bottle! If you are after the steps this one is easy:
-grab your trusty paper towel and remove the membrane from the back of the ribs
- cover with your delicious rub
- onto the girl for around 2 hours at 225F
-wrap in foil with some butter, brown sugar and honey 🍯
- after about an hour unwrap and glaze with sauce ( I upped the temp for the last bit to 325F). I may have gone over the top with the glaze but it tasted so good.
- then eat 😋

Seafood Pasta salad.

It's going to be very hot here today, so I've prepared a nice seafood pasta salad to enjoy later on.

Using Artisan Fusilloni pasta from .

Seasoned with my secret ingredient The One Eighty Blend from .

Added some fresh seafood, I picked up from .

Some cherry tomatoes, celery and bell pepper.

I mixed a bottle of Pasta salad with squeeze of lemon juice.

Quick easy and perfect for this hot day.

Smoked Shotgun Shells

Mixed beef and pork mince together with diced jalapeño, spring onions, grated cheese and season. Stuff cannelloni shells and wrap with your favourite bacon. Cover favourite BBQ rub and smoke at 300f until meat reaches interal temp of 165f. Lightly cover the shells with your favourite BBQ sauce and cook for a further 10 minutes. Let them rest and serve.

Roast chicken with warm potato, rocket and chorizo salad. Served with green beans.

This was fantastic and a nice change to the normal roast and veges. The salad is made with warm roast potatoes, red onion, garlic and chorizo. Then tossed in a vinaigrette dressing with honey, apple cider vinegar, olive oil and wholegrain mustard. Add your rocket and serve warm. I’d highly recommend ALL of these flavours and this combination.

I started SAUC'D LOWNSLOW with my wifey in 2020 after realising it wasn’t always easy to source the highest-quality, fresh, local and affordable produce. We’ve worked hard to build strong relationships with our incredible suppliers, which helps us to keep our costs down, and we do all we can to pass those savings on to you. After winging it with some pineapples at meatstock(dam they were good) I though I’d have another crack.
I was going to hang it and let it slowly cook, but it’s quite wet down here.
So, pineapple, chopped with my Facas Medeiros / AUS cleaver, rubbed with saucdlownslow sugar and spice blend, now it’s spending some quality time in the Weber Barbecues Australia/New Zealand over Heat Beads BBQ coconut and lump.


Pie time!! Using some left over beef shank!
Short crust bottoms, puff tops, into pie tins around the kettle kone with a mix of heatbeads lump and coconut.
