A few weeks ago I genuinely didn’t think I’d be able to finish this.

Turns out my daughter was right.

One square at a time becomes a cardigan. 🧶

Recovery has taught me a lot about patience, and this little project gave me something to focus on when sitting still didn’t come naturally.

It’s not perfect.

Neither am I.

But I’m pretty pleased with both. ✨

In the glass today is Bollinger R.D. 2002 🥂

I had the privilege of enjoying this extraordinary champagne in 2017 in none other than Madame Bollinger’s dining room.

And if you’ve seen my last Speak Champagne Fluently post about disgorgement, you’ve already discovered why this wine is so special.

Because R.D. literally stands for Recently Disgorged.

Bollinger only produces R.D. in exceptional vintages.

The 2002 spent more than 13 years quietly ageing on its lees before disgorgement.

That extended ageing created incredible depth and complexity.

Then came the moment we discussed in the last post -

Disgorgement.

The yeast sediment was removed, revealing a wine that somehow combines mature flavours of brioche, honey and toasted nuts with astonishing freshness and vitality.

This is what makes R.D. so fascinating.

You are tasting a wine shaped by time, but awakened by disgorgement ✨

After years of ageing, there is still one final obstacle before champagne is ready to drink.

The yeast sediment has to be removed.

Disgorgement 🍾

One of the most important moments in the champagne-making process.

And one of the last.

The neck of the bottle is frozen and the temporary cap removed.

The pressure inside the bottle then ejects the frozen plug of yeast sediment in a split second ❄️

Without disgorgement, champagne would remain cloudy.

This final step gives champagne its brilliance, clarity, and elegance ✨

Most people never think about why champagne is crystal clear ✨

But before disgorgement…
every bottle once held a cloudy layer of yeast sediment.

That’s where riddling comes in.

And perhaps no champagne understands the importance of brilliance and clarity more than Cristal 🥂

Because when your bottle is transparent…
there’s nowhere to hide.

In the glass today is Louis Roederer Cristal 2008 - a champagne I had the privilege of tasting in Champagne in 2018, during a visit where I also met Jean-Baptiste Lécaillon, Chef de Cave of Louis Roederer ✨

Cristal was once again named the World’s Most Admired Champagne Brand this year - the seventh year in a row.

And tasting this wine, it’s easy to understand why.

Everything about it speaks of precision.
The purity of the fruit.
The extraordinary texture.
The clarity in the glass.

Riddling may seem like a quiet, almost invisible process, but without it, a champagne like Cristal could never become the luminous wine we know today.

Maybe recovery makes you reflective…

Because if I could have a glass of champagne this Friday afternoon, it wouldn’t be something loud or flashy.

It would be something layered, patient, and quietly evolved over time 🥂
