COOKING WITH KIDS: YEMISTA

At our Yiayia Voula’s house, the heart of her home was always the kitchen, where so many memories were made and traditions were shared. One of our favorite family recipes is Yemista, a delicious Greek dish of stuffed vegetables. Not only is it a healthy and satisfying meal, but it’s also a wonderful way to get little children involved in cooking. I love to now share this tradition with my own children.

Here’s why it is a perfect dish to cook with your little ones:

👉 Hands-On Fun: From scooping out vegetables to stuffing them, Yemista offers plenty of tactile activities that kids enjoy. They can help scoop out the insides and mix the filling.

👉 Matching Game: Kids can play a fun game of matching the vegetable tops to the bottoms, using problem-solving skills. It’s a simple but engaging way to keep them interested and involved in the cooking process.

👉 Simple Ingredients: Yemista uses basic, wholesome ingredients that are easy for kids to handle. They can learn about different vegetables, herbs, and how simple ingredients can turn into a delicious meal.

As we cook, we can teach kids about different vegetables, herbs, and spices, making the kitchen a place of learning and discovery. It’s a great way to introduce them to the basics of cooking and healthy eating.

🍋 One Pan Wonder: Chicken with Lemon Potatoes 🍋

{Κοτόπουλο με Πατάτες Λεμονάτες}

Looking for a simple yet delicious weeknight meal to make? Try this recipe for Lemon Oregano Roasted Chicken and Potatoes!

Ingredients:
- 6-8 chicken drumsticks
- 4-5 medium potatoes, cut into chunks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions:
1. **Preheat Oven**: Preheat your oven to 400°F (200°C).
2. **Prepare Ingredients**: In a large bowl, toss the potato chunks with 2 tablespoons of olive oil, half of the minced garlic, half of the lemon zest, half of the lemon juice, half of the oregano, salt, and pepper.
3. **Arrange in Pan**: Spread the seasoned potatoes in a single layer on a baking sheet or in a large roasting pan.
4. **Season Chicken**: In the same bowl, toss the chicken drumsticks with the remaining olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper.
5. **Add to Pan**: Arrange the chicken drumsticks on top of the potatoes.
6. **Roast**: Roast in the preheated oven for about 40-50 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the potatoes are tender and golden brown.

What’s for dinner tonight? Pastitsio! This classic Greek comfort food needs serious multitasking skills in the kitchen, with three steps to create a delicious, layered dish.

📸🍪 Olive Oil & Cinnamon Biscuits 🍪📸

Sometimes the most simple recipes are the best, and these olive oil biscuits prove it! Easy to make and delicious, they never last long in our house—our toddlers can’t get enough!

Here’s how you can make them:

Ingredients:
- 1 cup olive oil
- 1 cup sugar
- 1 cup water
- 4-5 cups self-raising flour (or as needed)
- 2 tsp ground cinnamon
- sesame seeds for coating

Instructions:

1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Mix Wet Ingredients: In a large mixing bowl, combine the olive oil, sugar, and water. Mix until the sugar is dissolved and the mixture is well combined.

3. Add Dry Ingredients: In a separate bowl, combine 4 cups of self-raising flour with the ground cinnamon. Gradually add the dry ingredients to the wet mixture, stirring with a spoon or spatula until a dough forms. If the dough is too sticky, add more flour a little at a time until the dough is manageable but still soft.

4. Shape the Biscuits: Pinch off small pieces of dough and roll them into balls (about the size of a walnut) or into logs, then shape them into traditional twists, rings, or any desired shape.

5. Dip and coat: Dip each shaped biscuit in a bowl of water, then roll it in sesame seeds to coat.

6. Bake: Place the shaped dough onto the prepared baking sheet, leaving some space between each biscuit. Bake in the preheated oven for 20-25 minutes or until the biscuits are golden brown.

7. Cool: Allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

✨ Notes:
- Add more cinnamon or other spices like ground cloves or nutmeg for extra flavour or you can even use vanilla extract or orange rind
- For a softer texture, slightly reduce the baking time.
- Store the biscuits in an airtight container at room temperature for up to two weeks.

🌟 Discovering the world of Hilopites! 🍲✨ Did you know that Hilopites are traditional Greek egg noodles? These hearty noodles have been a staple in Greek cuisine for centuries, loved for their comforting texture and versatility in a variety of dishes.

🏛️ Originating from the regions of Greece, hilopites are believed to have ancient roots, tracing back to the Byzantine era. Handmade with simple ingredients like flour, eggs, and milk, these noodles were a beloved food among Greek families, offering nourishment and warmth during long winter months and were a favourite of our Yiayia Voula in her family village.

Today, hilopites are enjoyed in a myriad of dishes, from classic soups like chicken avgolemono to hearty casseroles like chicken hilopites. Their unique texture adds a delightful bite to any recipe, while their ability to absorb flavors makes them perfect for soaking up rich sauces and broths.

TSOUREKI ✨

Easter Traditional Tsoureki is a sweet bread, the most common shape are the three braids which symbolise the Holy Trinity and the dough is flavored with unique aromatic spices like mahlepi made from the ground seeds of cherry.

☦️ ❤️ Greek Orthodox Easter Traditions ✨

Koulourakia biscuits and Red Eggs, made with reverence for tradition and faith in the way our Yiayia Voula taught us.

Koulourakia: Sweet biscuits made with our family recipe passed down among the generations. These treats hold a special significance as they are traditionally baked on Holy Thursday, symbolizing the anticipation and preparation for the Pascha feast.

Red Eggs: Symbolizing Christ’s resurrection, crimson-hued eggs are used in the Greek game Tsougrisma. Players tap eggs together, saying “Christos Anesti!” (Christ has risen) and “Alithos Anesti!” (Indeed, he has). The last uncracked egg brings luck for the year.
