Here is another great idea for making your weekend bbq burgers a bit fancy, add finely chopped cooked beetroot ( roast, microwave or prepacked) to your hamburger mix.
Here are suggested ratios for adding cooked beetroot from Love Beets Australia
250gm cooked beetroot, finely chopped
500g minced lamb
1 egg, beaten
2 tbsp chopped mint
2 cloves garlic, crushed
Salt and freshly ground black pepper
Probably makes 6-8 burgers depending on how big you like them 😉

Earthy roasted beets drizzled with sweet and tart balsamic vinegar and robust rosemary! About to be paired with a herby nutty brown rice and a tangy horseradish sourcream, deliciousness....

My Beetroot and Feta Tarte Tatin
This is such a lovely dish, with bold earthy sweet and salty flavours that match perfectly for the summer weather! It can even be prepared in advance then cooked 30mins before you want to serve....
It has simple flavours and ingredients, perfect for a light brunch date or even as a dinner with a salad on the side! You could use the same recipe with different vegetables in it like sweet potato or pumpkin, add onion or fresh herbs or use a different kind of vinegar or cheese! But I find the combination of the sweetened earthy beets and the tangy feta to be a perfect match, especially when its served with a chilled bottle of crisp white wine!
Ingredients-
2-3 large beetroot, approx 250g (cooked, peeled and cubed)
1Tbs butter
1Tbs cooking oil of your choice
2Tbs sugar
2Tbs balsamic vinegar
salt and pepper to taste
2 x sheets of puff pastry (thawed to room temp)
2 x spring onions (sliced)
100g marinated feta (crumbled)
Method-
1) Preheat the oven to 180oC.
2) In a oven proof fry pan, place the butter, oil, sugar, vinegar and season to taste. Once it is gently simmering, add the beetroot and allow the liquid to reduce slightly till it becomes syrupy.
3) Remove from the heat and allow it to cool slightly before topping with the puff pastry. Fold any edges in to avoid it burning, then bake in the oven for 30mins, until the pastry is cooked and golden.
4) Remove the tart from the oven and allow it to cool before inverting it onto a plate. I recommend you use a spatula around the edge of the pastry to make sure it isn't stuck anywhere, then get a plate that is larger than the rim of the frypan, and hold them together tightly before flipping it very quickly and firmly.
5) Place the tart on a serving platter and then sprinkle the spring onion and feta over to garnish!
