Spring onion, garlic, and sizzling hot oil — simple ingredients, but when they meet, magic happens. The fragrance hits you first, earthy and bold, followed by a warmth that lingers on the palate.

In Asian kitchens, this pairing is a classic — drizzled over noodles, seafood, or even tofu. But I’ve always believed it deserves a place in Western cuisine too. Imagine it infused into roast potatoes, swirled into creamy mashed potatoes, or drizzled over grilled steak.

A Taste of Childhood in Every Bite

Growing up, there was always a jar of homemade pickled chili sitting on the kitchen table — fiery green, tangy, and just waiting to be added to a bowl of steaming noodles.

It’s one of my childhood favourites, and I still make it the same way today. The acidity is perfectly balanced, giving that refreshing bite that cuts through rich broths and stir-fries, while adding just the right kick of heat.

One spoonful, and suddenly I’m right back at the family table, slurping noodles with a big smile.
