This dish has been a culmination of years, thinking it was great but in fact it was always missing something…..
Today I figured out what that was, what it was missing was love and time, in the past I had tried to rush it, get it on a plate and be done with it.
Tonight I spent the time, with music in the background, a wine in my hand it was a tale of time as I stood there watching, tasting and adjusting to where it should be.
This Chorizo and Prawn Risotto is the best I have made but this was cooked from the heart, it was made with love and to me food is just that.
You put food in front of people there is no fighting, no arguing or anything else, just smiles and full bellies ❤️❤️❤️
