Sourdough tip:
When first getting your starter, spend a few days getting to know it .
Learn about its peaking and dropping.
Learn how much water and flour you need to put in it for what you need to bake.
Discard and feed and maybe try a few discard recipes, like crumpets or English muffins or maybe a focaccia.
Remember discard doesn’t necessarily mean to throw it away. It means take out what you need to bake with.
