Step inside our kitchen for a moment.

This is Omar — the steady hands and sharp mind behind every batch of dough that becomes a Cholito empanada.
He’s a professional pastry chef with years of experience, but what makes him special isn’t just technique. It’s the discipline, the precision, and the pride he brings to a craft most people never get to see.

Every morning, before the first empanada is shaped, Omar is already at work:

• Mixing and resting the dough until it reaches the perfect elasticity
• Sheeting it by hand and machine to get that signature thin, delicate bite
• Checking texture, hydration, and consistency like a true artisan
• And yes — keeping the whole kitchen running with calm, quiet confidence

Our empanadas start with him.
The colours, the folds, the crisp bake — none of it happens without the foundation he builds.
