Hunan Black Tea 🖤

High in the Hunan Mountains of China, mist and mineral-rich soil slow this tea plant down, letting flavour build over time before a single leaf is picked. This black tea starts life the same way as green tea and matcha, from the very same plant, Camellia sinensis. What changes everything is what happens after harvest: a full oxidation that darkens the leaves and deepens them into something richer and more full-bodied.

In the region, this tea is brewed simply and drunk daily, part of the rhythm of the day rather than a remedy for anything in particular. The leaves are rich in polyphenols like theaflavins and thearubigins, compounds that form during oxidation, alongside a natural caffeine content that lends a more sustained, structured kind of alertness than a quick jolt.

In the cup, it's rich and smooth, with a gentle malty depth and notes of dried fruit, soft wood, and a light sweetness. Rounded and warming, it makes an easy base for spices, florals, or citrus, and settles well into a slow morning or an unhurried afternoon pause.

In Sanskrit, Dharma names something most languages leave unspoken: the sense that a life can be lived in alignment, where a person's values and their actions run along the same line.

In Hindu and Buddhist traditions it was never meant as a fixed rule. It's personal, and it shifts depending on who you are and where you stand. It lives in the ordinary places - in how someone treats the people close to them, in the choices made quietly, away from any audience.

It has less to do with being right and more to do with being honest. Acting in ways that feel true, and returning to that even after losing the thread. Held long enough, it becomes something a person can rest their weight on.

Cornflower grew wild through European wheat fields long before anyone thought to cultivate it, a blue so vivid it earned its own place in folklore. English gardeners called it bachelor's button, worn in a buttonhole as a quiet signal of affection. In France, the same flower became the bleuet, worn each November eleventh in remembrance.

Older still, European herbalists reached for it as a cooling compress for tired eyes.
Its colour comes from anthocyanins, the same plant pigments found in blueberries and red cabbage. Researchers have found they carry antioxidant properties, with some studies pointing to a mild anti-inflammatory effect. Cornflower isn't the ingredient doing the heavy lifting in a blend, it's the quiet finishing touch.

On its own it brings little flavour, just a faint, herbaceous note. What it brings is colour, a wash of blue-violet through the cup and petals scattered through the leaf that make a blend look as calm as it tastes.
