We took the whole team out for dinner to celebrate a successful truffle season Philippe Restaurant. And of course we had to order his house speciality, truffle rotisserie chicken, it definitely lived up to expectations! Such a treat to indulge in his cooking and see him work his magic in the kitchen.

Clay, the apprentice truffle sniffer, has officially logged his first find! 🐾🍄

Head truffle sniffer Lexi has been stealing the spotlight this season while Clay’s been quietly working on his training. But after a little secret “meeting of the minds” with our head dog, Clay decided it was his time to shine!

Clay successfully located his very first unassisted truffle today! He’s been dropping hints that he was ready, but this confirms our lovable goofball is officially up to the task. Way to go, Clay! 👏✨

Truffle + Eggs + Sunday mornings = Perfection

One of our favorite ways to enjoy our truffles is simple scrambled eggs. You simply microplane your truffle over the top of your eggs and it’s ready to devour.

But if you want to layer the truffle flavours you can also infuse the truffle into the butter and eggs beforehand.

Truffle Butter - soften your butter and then mix in finely grated truffle. Place in fridge overnight then enjoy. Store any leftover in the freezer… if there is any!

Truffle infused Eggs - store your truffle wrapped in paper towel with the eggs. The eggs will absorb the aroma and give your eggs a nice truffle-y boost.

Looking back on an incredible time at the Bellevue Truffle Harvest Long Table Lunch and honestly, still thinking of the cheeseboard, especially that truffle infused Brie.”

The secret to getting that intense aroma isn’t just adding truffles—it’s letting the fat of the Brie absorb the essential oils for at least 24–48 hours before serving. Simple as that, a quality Brie, truffle and time.

A huge thank you to everyone who came along, and listened to our grower talk, met the dogs, and shared the event with us. We’re still excited to have been able to collaborate on such a special event and see our hard work come to fruition.

What a week it has been for our little farm!

As I mowed the lawns today I took a moment to look back over the farm and reflect on the week we have had, and how far we have come on this journey since we began.

We started the week celebrating Logan’s 9th birthday, which seems crazy! He wasn’t even on the radar in 2016 when we put the deposit down on the empty paddock that has now become home!

On Tuesday we were lucky to be invited to an exclusive event in the heart of Melbourne, where our truffles featured on 2 of the 4 courses. Michael was asked to be a guest speaker and share our journey growing truffles. It was an amazing experience with lots of questions from the members and it was rewarding to see people enjoying something we had grown.

Wednesday was a big day, we ditched the black tie attire and donned our dirt sniffing clothes to unearth our farms record breaker truffle. A whopping 515grams, affectionately named ‘Big Belle’.

Big Belle became the star of the show at our first collaboration with the team at Bellevue Farm Gate for the ‘Long Table Truffle Lunch’. What an amazing event in their reclaimed cool room. It was a great way to launch the space and share the event with friends, new and old. Again it was great to see how interested the diners were about our journey, with so many questions from around the room.

I can’t wait to see what is next for our little farm! Keep following for updates!
