A search through the fridge and cupboard at lunch time ends up with these creations of Zucchini, Haloumi, Quinoa and Brown rice patties. Thick and full of flavour the Haloumi is binding ingredient here and the taste is amazing, loving the texture of brown rice and quinoa, Served on a asian slaw topped with fresh parsley, shallots, corriander and hot chilli sauce. They say the best creations are when they just come together without a recipe. Gotta admit they are good. 😋

Busy baking today for tmr Seniors Event at Tweed Heads Civic Centre. 150 people to feed and here is a sneak peak of our orange, mango & coconut muffins with white chocolate ganache and white chocolate transfer sheet pieces. 70 of these guys done another 80 pieces of carrot cake, date and Choc mud and caramel white chocolate muffins on their way.

It's a pancake kinda morning with these thick spongey Vegan pancakes with no eggs or dairy. I've added in blueberries to mine and topped it with a blended mix of frozen raspberries and bananas and topped it with cacao crackle from pancakes are amazing get cooking. Here is the basic recipe:

2 cups Self Raising Flour
1 tablespoon custard powder( optional but does give it flavour)
1 tablespoon corn flour
1 tablespoon rice malt syrup (use sugar if you don't have this)
2 tablespoon coconut oil (just use what ever oil you have if you don't have coconut oil)
2 cups coconut/almond milk

Place in a blender and blitz away.

Im excited about these little numbers we have done up, cute and just the perfect thing to accompany a cup of tea. Everyone loves a biscuit with there tea so I thought how about a Coconut Shortbread dipped in dark chocolate with some with almonds, coconut and designed like a tea bag ready to be dipped in the cuppa? A little experimenting in the kitchen this arvo with these Vegan Mango cupcakes with coconut frosting. I was trying to adapt a regular version by swapping butter for oil, eggs for mango, and coconut sugar (power super foods) from my amazing instead of refined sugar, result... Amazing beautiful cupcakes with a thick vegan frosting of coconut and a raspberry to cut the sweetness. Love these cupcakes.

Recipe
1 cup plain flour
1/2 cup coconut flour
1/4 cup shredded coconut
2 tsp baking powder
1 1/2 cup mango diced up
1/3 cup coconut sugar
1 tsp vanilla essence

Sift all the dry ingredients and in a blender slowly add all your wet ingredients. Add a little more coconut oil if you feel mix is a little dry. Place in cupcake cases bake at 190c for about 20mins or until you poke a skewer in the middle and it comes out clean.
Frosting is Nuttelex butter mixed with icing sugar, coconut essence and more shredded coconut. Top with a raspberry.

Creamy Chai Tea Smoothie

Two of my favourite things combined smoothies and chai.

Recipe
Serves 2

1 cup almond / coconut milk
1/4 tsp dried chai tea powder or 1/2 cup brewed chai tea if using teabags & then only use 1/2 cup almond milk
few drops vanilla essence
2 frozen banana
1 tbsp rice malt syrup
Cinnamon
Blend together and top with cinnamon.

On a hot day like today these Vegan sorbet Bars hit the spot, it's almost like a creamy Weis bar and just melts in your mouth. With a crunchy bottom and topped with a vegan Choc sauce I can guarantee you will make this over n over.

Recipe:
Crust
1 1/2 cups of nuts any will do
1/3 cup of melted coconut oil
2 tbsp rice malt syrup
2 tbsp coconut
Blitz all together and press into a tin and bake at 190 for 15 mins

Mango Sorbet filling
2 cups of mango
1/3 cup coconut oil
1/3 cup of coconut milk or coconut cream
3 tbsp rice malt syrup
Blitz all together and place on top of your base. Top with toasted coconut and Choc sauce. Freeze until firm and cut into bars. Enjoy

A little pre work out breakfast to keep my energy up. Chia seeds are so beneficial for you and keeps you full and hydrated longer. I realise a bag of seeds can be $7 up so to save costs, go to a Coles or Woolies and use the self service scoop and pay option works a lot cheaper and you get the amount you just need. These seeds have been soaking overnight in a good premium coconut milk.

R E C I P E
1/4 cup chia seeds
1 cup coconut Milk
Rice malt syrup or maple syrup optional to sweeten
Mix all together and let it sit in the fridge overnight. Top with slices of banana, coconut or if your not vegan a big dollop of yoghurt. Options are endless. Just get the base recipe and experiment away. ( adding fruit such as banana or raspberries in it while soaking overnight is insanely good as well)

Vegan Pecan & Coconut Brittle

Another cheap idea to make!!! At Coles Rice malt syrup is half price so great to get a few and make this brittle. Be prepared to be making this on a regular basis. We have done a Vegan, Pecan & Coconut Brittle.... OMG they are so good. The deep caramel taste followed by the creamy crunch of pecans and coconut and a slight salt taste makes these amazing and very morish. I need to hide it from my son Isaac as he can't get enough of them. I have already made 3 batches of this. Here is the recipe:

Vegan Pecan & Coconut Brittle
Ingredients
1 cup Rice Malt Syrup
1/3 cup coconut oil
1 1/2 cups pecans ( or your favourite nuts)
1/4 tsp himalayan salt
1/2 tsp baking soda
2 tbsp coconut
Method
Bring rice malt syrup and coconut oil to a boil in a medium sized saucepan. Once boiling, add the pecans and coconut.

Keep stirring for approx 10 minutes or so until it reaches hard crack temperature. If you don't have a sugar thermometer to measure hard crack temperature, dip the end of the teaspoon in the syrup then into the cold water to set it. If you pull it out and its rock solid then your good to go.

Remove from heat and stir in salt and baking soda. Pour onto a tray lined with baking paper and put into freezer for two hours to cool. ( the thinner you want your brittle the bigger the pan or smaller for chunky pieces. Once cool, break into pieces and enjoy!!! These will be a deeper brown as the rice malt syrup is deep in colour. Great as is if not put on top of ice cream. Tip: buy your nuts at the scoop and pay bay works out to be a lot cheaper

We have been quiet on here due to the lack of exposure Facebook gives being a business. Only at least 10% of our fans will see the post hence why we went to instagram, but we have had alot of people asking for recipes and where have we gone. So over the next couple of days will slowly upload our recipes we have been doing. I have gone quiet over the last 6 months concentrating on work at Uni and doing odd catering jobs here and there.
