I was kindly invited to spend Christmas Day in Ararat (Vic), with my son-in-law's family this year. 🙏

So, I made this simple salad to take with me, and also took along my Fig Caramelised Balsamic to put on it.

BUT - what I came to tell you was this

I've been waiting to get my hands on a packet of this GLUTEN FREE Muffin mix from Waltanna Farms - and I finally got some! 🙌

My son generously bought me a packet from the Hamilton Makers Market today. 🥰
If you haven't been to the Makers Market yet, it is still on until Tuesday, 24th December - in Hamilton, Vic.

Have you tried this 𝑪𝒉𝒊𝒄𝒌𝒆𝒏 𝑬𝒏𝒄𝒉𝒊𝒍𝒂𝒅𝒂 𝑺𝒕𝒂𝒄𝒌?

It's super delicious, super simple to make and it's a great crowd pleaser too!

INGREDIENTS
• 8 tortillas (20cm)
• 400g tin crushed tomatoes
• 750g cooked chicken, shredded
• 2 cups mozzarella cheese, grated
• 1 Tbsp 𝙎𝙤𝙪𝙡𝙮 𝙂𝙪𝙖𝙘𝙖𝙢𝙤𝙡𝙚 𝙎𝙥𝙞𝙘𝙚
• Optional: 𝘾𝙝𝙞𝙡𝙡𝙞 & 𝙇𝙞𝙢𝙚 𝙊𝙡𝙞𝙫𝙚 𝙊𝙞𝙡
• Optional: 𝙂𝙖𝙧𝙡𝙞𝙘 𝘿𝙞𝙫𝙞𝙣-𝙤! 𝘽𝙖𝙡𝙨𝙖𝙢𝙞𝙘
DIRECTIONS
Preheat oven to 180C.
Line a 20cm round cake tin with baking paper.
In a bowl, mix together sauce/tomatoes with Mexi-Go-Go Spice
Make layers in this order: tortilla, sauce, chicken and cheese.
Continue layering process until all ingredients are used.
Optional: half way through, drizzle one layer with Chilli & Lime Olive Oil for an extra pop of flavour.
End with a layer of tortilla, sauce and cheese.
Bake until the cheese is completely melted and sauce is bubbling (20-30 minutes).
Drizzle with Garlic Divin-o! and cool for 10 minutes before slicing to serve
𝗡𝗼𝘁𝗲𝘀 𝗮𝗻𝗱 𝗼𝗽𝘁𝗶𝗼𝗻𝘀:
This is a brilliant veggie smuggler. You can add kidney beans, corn, spring onions, red capsicum or any other veggies you have in the fridge.
𝗧𝗿𝘆 𝘁𝗵𝗲𝘀𝗲 𝗯𝗲𝗮𝘂𝘁𝗶𝗳𝘂𝗹 𝗕𝗹𝗲𝗻𝗱𝘀: mix 1 cup sour cream with 1 Tbsp Souly Guacamole Spice. Mix well and refrigerate for at least 30 minutes for flavours to develop.
For extra flavour, cook 4 chicken thighs in the air fryer (or oven) for 22 mins on 180, drizzled with Pineapple Splash Balsamic. Once cooled, shred or chop finely.

This dish was so good! It really is a matter of "thinking outside the square" when using Flavourista products.

• Chicken, Green Bean & Broccoli Stir-Fry •

Step One:
2 chicken breasts, cut into thin strips
1 tablespoon cornflour
1 tablespoon soy sauce
1 dessertspoon Souly Guacamole spice
1 tablespoon Roasted Garlic Smash olive oil
Step Two:
3 tablespoons soy sauce
3 tablespoons rice vinegar
3 tablespoons Pineapple Splash Balsamic
Stage Three:
2 tablespoons butter
350g fresh green beans, trimmed
4 broccoli florets, cut into bite sized pieces
I small onion, finely sliced
1 tablespoon garlic, minced
1 teaspoon ginger, minced

Chicken - In a snap-lock bag, combine chicken, cornflour, soy sauce and guacamole slice. Shake to evenly coat chicken. Set aside.
Sauce - Combine ingredients for the sauce in a small jug and set aside.
Veggies - Heat a large pan and add butter. Once melted, stir in the beans & broccoli and cook for 3-5 minutes. Add in onion, garlic and ginger and fry off for 30 seconds until fragrant. Remove from pan and set aside.
Add RGS oil, and add chicken. Fry until browned and cooked through.
Return the veggies to the pan, and pour the sauce mixture in. Cook for about 2 minutes, until the sauce thickens slightly.
Serve immediately and enjoy!

If you have to supply something for Christmas, put this on your list!

🌾 Corn Relish Dip

Small portion just for one:
1/2 cup sour cream
1 dessertspoon CORN RELISH spice blend
Mayonnaise, optional (use as much as is required for a consistency that suits your liking)

Mix all ingredients together - pop in fridge for at least 30mins to develop the flavour.
Your tastebuds will tingle - and will want more!

Serve with veggie sticks or with crackers. 😋
