Welcome to the official page for Australian Asparagus! We are the Australian Asparagus Council, the peak industry body for Australian Asparagus. Our farmers produce over 95% of Australia’s asparagus crop. Asparagus is a fascinating vegetable arising from a root system of fleshy rhizomes known as the ‘crown’. In spring the asparagus crown sends up shoots (spears), which are the edible portion of the plant. Did you know that in ideal conditions asparagus spears can grow 1-2 cm per hour? Asparagus is the real fast food! Australian asparagus is available from September to March and green asparagus is the most popular variety in Australia. Look for firm, bright smooth, spears of uniform size with closed, compact tips. Asparagus is quick and easy to cook - steam, stir-fry, roast, grill or BBQ or serve in luscious salads.
