Today I realised I had spinach and feta plus pastry that needed using. Now I will admit that this recipe wasn’t a Thermi recipe I still used it! I made my own ricotta as it’s a 30min drive to the shops (and I’m unorganised haha) the used Thermi to mix everything together!
Yum! I had 2 for lunch, no doubt the kid will demolish the left overs when they get home 🤣
I will never buy spinach and feta triangles again!

I always seem to be apologising for not being present much, truth is, life has been crazy, super busy which means I’m exhausted mentally and physically.
BUT it doesn’t mean I haven’t been cooking, I still use my thermi most days, sometimes multiple times a day!
Today I made a few things. I did Skinnymixers American style burgers for my sons lunches (make them into hamburgers), lemon drizzle cake, beef-ragout with macaroni and cheesy broccoli pots 💜
All so delicious 🤤

As some of you know, I’ve been working on this fundraiser raffle to support Dementia Australia, a cause that means so much to me personally.

My beautiful Nan was affected by, and passed away from dementia, and I’ve seen firsthand the impact this disease can have - not only on the person living with dementia, but also on their family, friends and carers. It’s a journey that can be incredibly challenging, and I wanted to do something to help support the amazing work being done to provide support, information and advocacy for those affected.

More than 400,000 Australians are currently living with dementia, and the impact reaches so many more people around them.

It’s been crazy busy, although I have been using Thermi every day I just haven’t had time to even take a snap shot of what we have been eating 🙈
But tonight was a little slower thankfully so lasagne for tea and then fresh bread and fresh raspberry jam for breakfast tomorrow 💜
Makes me so happy to be able to make these things from scratch, no nasty preservatives or hidden additives!

Open cooking 😍 this is pretty cool! I can taste as I go without hang to remove the lid 👌 definitely a game changer!!

Phew! It was a big evening! Started cooking at 5.30ish, finished cooking and cleaning just now, 10pm! We did have tea in this time which took around half hour.
My daughter and I got busy and made :

- rum balls (minus the rum, cookidoo)
- blueberry muffins (Mez’s Raspberry and white chocolate)
- bacon and cheese muffins (Mez)
- choc chip oat bars (Skinnymixers)
- Bread (thermomumma)
- Banana bread (cookidoo)
- banana and oatmeal bars (cookidoo)
- chicken satay rissoles (Dinners 4)
- hidden veg rissoles (dinners 4)
- lazy chicken lasagna (dinners 4)
- American style hamburgers

Rissoles have gone into freezer for later in the week, lasagne is tomorrow nights tea, rest is lunch box fillers! All I have left to make is Porcupine meatball bake (dinners 3) for Tuesdays tea.

I love how easy Thermi makes my life, looking forward to an easier week with homemade goodies in lunch boxes 😍

Cook up this morning before work 💜

- Mez’s raspberry and white choc muffins BUT used blueberries and left out chocolate
- Skinnymixers rustic shepherds pie
- Skinnymixers honey mustard chicken
- Steamed rice
- Skinnymixers choc chip oat bars

All this made in 2hrs 😍 It’s why I love Thermi so much!
