So it begins! The very first flowers of the season have bloomed. That means early mornings for me for the coming weeks and months. I'm so excited, the vines are thriving and pushing out buds everywhere.
Every flower must be pollinated by hand on the morning. It opens in order for it to become a vanilla bean!

There are always jobs to attend to in the vanilla garden, and at this time of year they all seem to arrive at once. But let’s start with last year’s flowers.

Those flowers have grown into beautiful, chunky vanilla beans, and I’m progressively harvesting them as they reach the ideal stage of ripeness. The first signs are a slight yellowing at the ends and a subtle change in the overall colour, letting me know the changes inside the bean are well underway and it’s ready to be picked for the best flavour after curing.

The first batch is now in progress, and after just a week there’s already a rich, chocolatey aroma filling the air each time the beans come out into the sun. As they continue through the sweating, drying and conditioning stages, that flavour should deepen and become even more complex.

In just a few short months they’ll be ready to transform ordinary food into something truly special.

🥄 Double the Vanilla, Double the Joy! 🌿

I wouldn’t like to guess how many litres of milk my growing teenage Ned has gone through with this much homemade vanilla syrup — but let’s just say it didn’t last long! 😆

This bottle began with simple, beautiful ingredients — organic cane sugar, a whole vanilla bean, our own vanilla extract, and filtered water — simmered slowly until it turned a deep amber and filled the kitchen with the scent of pure happiness.

Since the last batch vanished in record time, we’re making a double batch this time so it might last more than a week!

✨ Perfect for milk, coffee, milkshakes, or drizzled over pancakes, desserts, or even porridge — it’s a big bottle of slow-made sweetness.

🌿 Flowering Season in the Vanilla Garden 🌸

Ever wondered why vanilla is one of the most expensive flavours in the world? It’s because it truly is the ultimate slow food — hands-on and time-consuming at every stage.

Right now, it’s flowering season. The vines are blooming, and every morning I take a slow walk through the garden to hand-pollinate each blossom before it closes forever. Each flower opens for just one day, and if I miss it, that’s it — no bean.

It’s a process that takes two hands and a lot of patience, but the reward is worth it. One day, I’ll bring a helper and show you the process in detail in a little video.

For now, let’s just pause and admire these gorgeous blooms together, the very start of the the process! 🤍

🌱 As the days grow warmer, our vanilla vines are waking up after their winter rest. We’re starting to see fresh flushes of growth and even some promising flower buds pushing through!

It’s always exciting to watch this stage unfold — each new shoot feels like a step closer to the dream of hand-pollinated vanilla pods. The flowers are attracting plenty of attention already… especially from the green ants, who seem determined to make themselves part of the process. They don’t mind giving me a little nip while I work around the vines either!

Since we don’t use sprays or chemicals in the garden, we’ll have to wait and see whether these tiny visitors turn out to be allies or troublemakers. Either way, they’re part of the story of growing vanilla naturally here in the tropics.

The Sweet Scent of Progress 🍨✨

We’re nearing the end of the busiest part of the vanilla curing journey — three weeks of patient, hands-on care as our beans have been gently sweated overnight and sun-dried by day 🌞🌙.

The change is remarkable: the beans are now a deep, chocolatey brown, soft, pliable, and richly wrinkled, having released much of their moisture and concentrated their exquisite aroma. Every breeze carries the scent of vanilla through our home — and honestly, it’s a scent we could get used to 🥰.

This phase has been all about transformation — and now, as we move into conditioning, the magic will continue. Over the coming weeks, the beans will deepen in complexity, richness, and fragrance — slowly becoming the luxurious, aromatic vanilla we all love 💫

This is slow food. Grown with care. Cured with love. And it smells like bliss.
