🍫 Chocolate + macadamias = one seriously good Aussie bake 🤎

These Chocolate Macadamia Brownies are rich, fudgy and packed with buttery Australian macadamias.

And I especially love that macadamias are native to Australia — so there’s a little bit of Aussie goodness in every bite 🇦🇺

They’re easy to make, beautifully chocolatey and very hard to stop at just one square!

Spring has arrived… and I’m starting it with a little adventure ✈️🌼

I’m heading off on a 3-night trip to a very special place in Australia — and to an Australian state or territory I’ve never visited before.

I’m very excited about this one and hoping to soak up plenty of inspiration while I’m away. With a bit of luck, I might even come home with an exciting new recipe to share with you too 👀

Winter, you haven’t been all bad… ❄️💛

Before we welcome spring tomorrow, I’m giving winter a proper send-off with a bowl of old-fashioned Golden Syrup Dumplings.

🇺🇸 TEXAS SHEET CAKE… from a little community cookbook in Kurri Kurri! 🇦🇺🍫

I love finding recipes that have travelled across the world and somehow ended up tucked inside an old Aussie community cookbook ❤️

This one came from a 1979 Kurri Kurri King Coal Community Cookbook that my Aunty Judy gave me – and it’s an absolute beauty.

Texas Sheet Cake is a wonderfully soft, moist chocolate cake that’s baked nice and thin, then covered with a simple chocolate icing while the cake is still warm 🤎

It’s easy, uses everyday ingredients and is perfect for lunchboxes, afternoon tea or those good old-fashioned “bring a plate” occasions.

A little taste of Texas… via the Hunter Valley 😊

Who remembers this one from the cake stall or Nan’s kitchen? ❤️

Raspberry Coconut Slice is one of those lovely old-fashioned recipes that never seems to go out of style.

A buttery coconut base, a generous layer of raspberry jam and that golden, chewy coconut topping… simple ingredients, but SO good. 🥥❤️

My version is based on three old recipes from my collection – including Nana Ling’s handwritten recipe, one from Mum’s collection and an old Women’s Weekly version. It’s definitely a recipe worth keeping.

Perfect with a cuppa, for lunchboxes, cake stalls… or just because you feel like baking something nostalgic this weekend ☕️

Who remembers their mum or nan making Raspberry Coconut Slice?

Who remembers Chocolate Crackles at every birthday party, school fete and cake stall? 🙋‍♀️🍫

Those little paper cases filled with crunchy, chocolatey Rice Bubbles were always one of the first things to disappear!

And they’ve been making Aussies happy for a very long time – Chocolate Crackles date right back to the 1930s. Some recipes really do stand the test of time. ❤️

Just 5 ingredients, no baking and about 10 minutes of work. Sometimes the old favourites really are the best.

Who remembers Honey Jumbles? 💗🤍

Those soft, spicy little biscuits with their unmistakable pink and white icing were such a treat growing up. Sadly, Arnott’s no longer makes them – but the good news is you can make them at home!

They’re soft-baked, warmly spiced with ginger and mixed spice, and topped with that glossy icing that makes them instantly recognisable. And I reckon the homemade version is even better than the one you remember. 😊

🥕 CARROT CAKE 🥕

Soft, moist, a little bit spicy and topped with a generous layer of cream cheese icing – this is exactly how I like my Carrot Cake. 😍

This version has cinnamon and mixed spice, plus crushed pineapple tucked into the mixture for even more flavour and moisture.

I’ve made mine in a ring tin, just like many of the older recipes suggested – apparently our nans knew this was a great way to get an evenly baked carrot cake!

Perfect with a cuppa on a Sunday afternoon ☕️🥕

There’s something so lovely about a batch of warm homemade scones 🫖💕 And these Cream Scones are one of my favourites.

The recipe comes from an old 1940s recipe book that belonged to Nana Ling, and instead of rubbing butter into the flour, you simply use cream. The result? Beautifully light, fluffy scones with very little fuss. 🙌

Serve them warm with plenty of jam and cream and pop the kettle on ☕️
