Butter Pecan Cookies
These tasty butter pecan cookies are a delicious treat for tea time. My daughter Kaveshri Nair makes them for Diwali.
A few tips: the cookie dough will be crumbly, but once you form into round balls, they will hold their shape. Make sure you turn the sheet in the oven halfway through baking for even browning.
This is the perfect cookie to gift for the holidays, and as a hostess gift. They are so easy to make, you can double up on the recipe
Just wrap with cellophane and a pretty bow!
makes 12 cookies

Ingredients
¾ cup pecans
½ cup unsalted butter at room temperature
â…“ cup sugar (plus more for coating)
1 teaspoon pure vanilla extract
â…› teaspoon fine sea salt
1 cup all purpose flour

Instructions
Preheat over to 180C
On a baking sheet, toast pecans about 6 minutes, or until fragrant. Let cool, finely chop.
With an electric mixer, cream butter and â…“ cup sugar until light, about 1 minute. The creamier the better.
Beat in salt, vanilla, and flour, scraping down sides of bowl, just until dough comes together. Fold in pecans.
Separate dough into 12 pieces; squeeze down to shape into balls in or curve it into horseshoe shapes.
Place 3 inches apart, on a baking sheet topped with parchment paper. Gently flatten with the bottom of a glass (reshape sides if necessary).
Sprinkle with sugar.
Bake until golden brown, rotating halfway through, about 15 minutes.
Cool cookies on a wire tack.

Chocolate Crunch Bars
A little melting, stirring and chilling and you've got a chocolatey treat to enjoy with a cuppa.
The kids will love it - let them help to make these crunch bars!

Ingredients
100g butter , roughly chopped
300g dark chocolate (such as Bournville or Cadbury), broken into squares
3 tbsp golden syrup
140g rich tea biscuit , roughly crushed - I used Eet sum mor
12 pink marshmallows , quartered (use scissors)
2 x 55g bars Turkish delight , halved and sliced (or use Maltesers, Milky Way or Crunchie bars)

Method
STEP 1
Gently melt the butter, chocolate and syrup in a pan over a low heat, stirring frequently until smooth, then cool for about 10 mins.

STEP 2
Stir the biscuits and sweets into the pan until well mixed, then pour into a 17cm square tin lined with foil and spread the mixture to roughly level it. Chill until hard, then cut into fingers.

It's like chewing Rocky Road, believe me....

OVEN BAKED POTATO CAKES

800 g potatoes, peeled and rinsed
2 eggs
2 tablespoons onion, finely chopped
salt and fresh cracked pepper
1 cup pancetta (or ham, bacon…), diced
2 tablespoons butter
1 tablespoon milk
2 tablespoons chives, chopped
4 tablespoons breadcrumbs or Panko
Method
Cook potatoes in plenty of salted water until cooked through. Meanwhile gently fry onion until translucent and set aside.
In a large bowl, mash the potatoes and combine with the eggs, pancetta, onions, butter and chives. Season with salt and pepper to taste. Adjust the texture with a bit of milk if necessary.
Preheat your oven to 190°C and line a baking sheet with parchment paper.
On the baking sheet, using a ring mold, sprinkle a layer of breadcrumbs, then scoop potato mixture to shape the cakes—about 1½ inch thick. Press down slightly with the back of a spatula and finish with another thin layer of breadcrumbs. Remove the ring mold and repeat the process.
Bake in the oven at 190°C for 10 minutes, or until golden, and serve the baked potato cakes warm, with a sprinkle of grated parmesan on top. Enjoy!

LAMB SHANKS
IN GREEK SALAD DRESSING SAUCE

â– 2-4 lamb shanks, depending on size
â– 1 bottle French or Greek salad dressing
â– 1 onion, quartered
â– 1 lemon, quartered
â– fresh rosemary
â– fresh origanum
â– fresh garlic (you can either cut the garlic in half like I did, or just toss the whole cloves into the baking dish)

1.Pre-heat the oven to 160°c or outside in you weber of in a potjie.
2.Place the lamb shanks in a baking dish so they all lie flat.
3.Pour over the salad dressing and place the onion, lemon, fresh herbs and garlic into the dish.
4.Cover with foil and place in the oven for 2-3 hours.
5.After this time, remove the dish from the oven and check whether the meat is softened yet. Depending on their size, they might need another hour in the oven. If they are soft, you can place them back in the oven, turn up the heat to 200°c and allow them to brown for 15 minutes. If they are not as soft as you would like them, return them to the oven, turn the heat up to 180°c and cook them for another hour, covered. When they are soft, brown them for 15 minutes.
6.Serve with starch of your choice and vegetables.
