She hosted a fine dining restaurant, captured in a five-part TV series, The Perfect Serve, airing late in 2020 globally and in Australia on Channel Nine. Showcasing the best Australian produce, she combined her signature creativity using spices with simplicity and elegance. With nine TV shows under her belt, Sarah has taken on a dream role as co-host on Farm to Fork. This 90-episode series is currently airing on Channel 10. Her second cookbook Everyday Indian will release in March 2021. Sarah is in demand as an international chef, restaurateur, TV host and inspirational speaker. Early 2019, she was invited as a guest speaker at the Economic Times Global Business Summit in New Delhi, India. In December that year, Sarah shared the stage with Heston Blumenthal at the Hindustan Times Leadership Summit. She rounded out 2019 as a host at Western Australia’s premier food festival, The Gourmet Escape. She has collaborated with internationally renowned chefs; Heston Blumenthal, Marco Pierre White, George Calombaris and Ranveer Brar. Moroccan Style Fish Balls 🇲🇦🔥🐟
Fresh, spicy and made for mopping up with bread. ❤️

Fish balls
400g firm white fish, finely chopped by hand
1 small red onion, finely diced
2 garlic cloves, grated
1 green chilli, finely chopped
1 egg
Handful coriander, chopped
Handful parsley, chopped
½ tsp ground cumin
½ tsp ground coriander
½ tsp turmeric
½ tsp sweet paprika
Zest of ½ lemon
2 tbsp breadcrumbs
Salt + pepper
Olive oil

Sauce
2 red capsicums, sliced
3 ripe tomatoes, chopped
2 garlic cloves, sliced
1 green chilli, chopped
2 tbsp tomato paste
1 tsp sweet paprika
1 tsp ground cumin
½ tsp ground coriander
½ preserved lemon, finely chopped
Pinch of sugar
2 cups water or fish stock
Olive oil
Salt + pepper

Method
Mix the fish ball ingredients, roll into balls and quickly brown in olive oil. I always chop the fish by hand, much better texture!

In the same pan, soften the capsicum and chilli, then add the garlic, spices, tomato paste and preserved lemon. Add tomatoes and stock and simmer until rich.

Nestle the fish balls into the sauce, cover and simmer for 15 minutes.

Finish with fresh coriander, lemon and a drizzle of olive oil. Serve with couscous or warm bread 🤌🏼❤️

Okay confession, someone else cooked dinner tonight 😅 Two minutes in the microwave and these CHEFGOOD meals are honestly delicious as they are… but I can never help myself.

Here’s what I added:

🍜 Stir fry - crushed peanuts + a squeeze of lime + Hot Toddy Birdseye. Instant crunch, instant zing.

🍋 Risotto - parmesan, lemon zest, cracked pepper and don’t forget your greens, blanched asparagus.

🥩 Braised beef - my parmesan gremolata: chopped parsley, lemon zest, grated parm and a drizzle of olive oil. Cuts through that rich pepper sauce like a dream.

30 seconds each, totally optional, but so worth it. Which one would you try? 👇

Lazy mans Moussaka - this was honestly an absolute winner and I highly recommend giving this a go!

Eggplant 🍆
2 large eggplants
30g olive oil
4g salt

Beef 🥩
500g beef mince
150g brown onion, finely diced
10g garlic, chopped
15g olive oil
120g red wine
35g tomato paste
200g water
3g ground allspice
1 cinnamon stick
3 bay leaves
5g salt
2g black pepper

Béchamel 🧀
50g butter
35g plain flour
500g milk, warmed
30g Parmesan or kefalograviera, finely grated
1g ground nutmeg
3g salt

Method 👩‍🍳

Heat oven to 190°C fan forced.

🍆 Halve and score the eggplants, rub with olive oil and salt, then roast cut-side down for 30–35 mins until beautifully soft.

🥩 Cook onion and garlic in olive oil, add beef and brown well. Add spices, wine, tomato paste and water, then simmer until rich and thick. Remove cinnamon and bay leaves.

🧀 Melt butter, stir in flour for 1 min, then gradually whisk in warm milk until thick and smooth. Stir through cheese, nutmeg and salt.

✨ scrape the centre of the eggplants gently, load them up with beef and spoon over plenty of béchamel. Bake until bubbling and golden.

That’s dinner sorted 🤍
