What you’ll need:4 large potatoes3 tsp olive oil 1/2 tsp salt1/2 tsp pepper Loaded toppings: Leftover coleslaw mix Your choice of sauce 1. Wash your potatoes. 2. Bake potatoes until lightly golden. 3. Remove potatoes from the oven. While the traditional egg hunt is always a lot of fun, it’s also worth considering the impact on the environment of egg-cessive packaging on many of our Easter treats. So, in the spirt of conscious consumerism, check out some of these egg-cellent suggestions to enjoy your Easter weekend sustainably:
• Only buy eggs that you know will be enjoyed, and repurpose or make your own gifts, wrapping and decorations. Charity shops also have great decorations!
• Check the packaging weight vs product weight (bigger boxes aren’t always better!) and choose eggs that have less packaging
• Plan your Easter feast and use all your leftovers for lunches or put in the freezer to enjoy another day
• Look for products and packaging made from recycled materials and place your plastic, aluminium and cardboard wrapping in the correct waste bins at home
• Scrunch all your Easter egg foil together when recycling – you need at least a golf ball size to place it in your recycling bin

Early this month more than 60 staff from Wesfarmers Perth office attended a team building day @PerthCityFarm run by Sophie Budd from @tastebudds Cooking Studio. SecondBite fresh produce donations were used to make a range of healthy meals that were delivered to Uniting WA Tranby Engagement Hub to feed people sleeping rough. Shining a spotlight on the SecondBite superhero volunteers in WA who leapt into action when we received a call that a family's Orange Orchard in Bindoon was bursting with oranges with no one to rescue them! 🦸♂️ Our volunteer army donned their hats, sunscreen & rolled up their sleeves to spend a whole day picking oranges straight from the trees 🍊 Together we rescued around 2 tonnes of fresh oranges!

SecondBite Ambassador Jessie Stephens visits Bankstown Women's Health Centre
In April, SecondBite ambassador Jessie Stephens visited our agency partner Bankstown Women's Health Centre in NSW to see their inspiring work. Among their services, the centre provides a food relief program for locals. Every Thursday community members can come by appointment to receive fresh produce, dry goods and frozen meals. Staff and volunteers put together the nutritious and culturally appropriate food relief packages. 90% of the food the centre provides each week comes from SecondBite.
Even before the recent lockdowns, our research revealed that 3 out of 4 of our charity partners have seen an increase in demand for food relief. Demand has since soared. Bankstown is now part of the LGA facing some of the toughest restrictions in Sydney.

On Tuesday this week our volunteers and team members from our charity partners were guests of honour at the Nandonation Dinner at the Belmont Forum in Western Australia. Nando's hosted the dinner to thank and celebrate the amazing contribution of our volunteers and partners in ending waste and ending hunger.
The event is also a wonderful testament to the partnership between Nandos, SecondBite and our charity partners. Nandos has been a long term SecondBite partner donating surplus food and supporting us in many other ways such as the Nandonation Dinner. SecondBite connects charity partners to collect the donated food from Nandos stores across Australia. The opportunity to acknowledge those involved in providing food to locals in need and have a bit of fun was enjoyed by everyone.

Last week SecondBite delivered 400 kgs of oranges and 350 kgs of butternut pumpkins (thanks to Northern Valley Packers & Australian Produce Brokers respectively) to Divine You in Narrogin. Divine You is a wellness retreat for cancer sufferers and carers. Locals could come and collect the fresh produce as needed. Some - like the lady and boy pictured at rear of their car - helped others by taking some donated produce for residents in a Karinya nursing home and independent living aged care units. And the man ‘skinning’ the oranges is making free OJ for people about to turn up to access the donated food! It's so wonderful to see people caring so much for others.

STOP! Don't throw out those 'disgustingly ripe' bananas! SecondBite Ambassador Yumi Stynes shared her amazing, super easy banana bread recipe with us during her recent visit to SecondBite's charity partner Our Big Kitchen.
It's the perfect thing to do with those bananas you have lying around getting browner by the day. Australians are absolutely mad for bananas – we produce thousands of tonnes each year. Unfortunately, they're also one of our most wasted foods.
About 1 in 3 bananas are thrown away. Not only is this recipe delicious and easy, it helps reduce waste by using bananas that you might otherwise think are inedible. Check out the recipe for Yumi's banana bread below, and let us know how you go with your super-ripe bananas in the comments!
THE ONLY BANANA BREAD RECIPE YOU’LL EVER NEED
Prep time: 10 minutes
Cooking time: 50 minutes
Ingredients:
Olive oil spray
3 disgustingly ripe bananas (250 grams)
60 grams softened butter
90ml liquid coconut oil or fresh-tasting olive oil
250 grams sugar (any kind)
¼ teaspoon of ground nutmeg
1 teaspoon ground cinnamon
2 eggs
1 teaspoon baking powder
1 teaspoon bicarbonate of soda (baking soda)
100 ml milk
1 teaspoon white vinegar
Pinch of salt
250 grams plain (all-purpose) flour
100 grams/ 1 cup chopped walnuts or pecans, lightly chopped
Directions: Preheat the oven to 180 ºC. Combine all ingredients (except nuts, if using) in a food processor and blend until smooth. Add nuts if using. Pour batter into a bread tin, and bake for 50 minutes.
Enjoy with butter, honey, peanut butter, mascarpone...whatever floats your boat!

There was much buzz and excitement at our Melbourne warehouse this Monday when the MasterChef Australia and Channel 10 news teams visited us. MasterChef judge Jock Zonfrillo; contestants Aaron, Brett, Linda and Sabina; and journalist Brendan Crew joined to help promote SecondBite's Winter Appeal which kicks off next week. This year we're aiming to raise enough funds to deliver 1 million meals to vulnerable Aussies.
Jock, Brett and Sabina helped to sort and pack produce in our warehouse, while Linda and Aaron helped to prepare and serve meals to people in need at our charity partner St Mary's House of Welcome.

Cyclone Seroja - SecondBite food relief response
Severe Tropical Cyclone Seroja was a deadly tropical cyclone that impacted Western Australia's mid west region, affecting Kalbarri, Northumberland, Perenjoni, Mingenew, Geraldton and Morawa. Homes have been destroyed and more than 20,000 residents were left without power after the cyclone made landfall as a category 3 storm at about 8pm on Sunday 11 April, bringing wind gusts of up to 170 kilometres per hour. People lost homes, business and community buildings, power and communications.
By Wednesday 14 April the 𝗦𝗲𝗰𝗼𝗻𝗱𝗕𝗶𝘁𝗲 𝗪𝗔 team got together 12 pallets of food - some donated by 𝗠𝗖𝗖𝗢. We called our amazing SecondBite friend Paul Cole at 𝗗𝗖𝗚 𝗥𝗲𝗻𝘁𝗮𝗹𝘀 and he generously lent us a 10 pallet truck free of charge. HandsandFeet came along in their truck so that we could ensure we could get as much food to the cyclone relief as possible.
We delivered food, toiletries and cleaning supplies to Northumberland Community Group, Sun City Christian Centre, Geraldton, and Geraldton Evacuation Centre, who were still without power and had limited communications. They were incredibly grateful.
When we dropped in at Geraldton Evacuation Centre, we were delighted to see Team Coles Geraldton there helping and waiting for the delivery of emergency supplies from Coles Distribution Centre in Perth. #CycloneSeroja
