My favourite, fluffy little potato clouds!
Ingredients:
โ Gnocchi
โ DF Pesto
โ Steamed Peas
โ Pan fried bacon
โ Spring Onions
โ Olive Oil
โ Salt & Pepper

Its really easy to make I used:
Gluten Free Pastry
Smoked Tofu mixed with homemade onion & mushroom gravy

Quick and easy quiches that are perfect as a snack or to pack in the kids lunch boxes. In this recipe Iโve used the gluten free puff pastry but it can be easily substituted for normal puff pastry. See recipe below ๐
MAKES 10-12
INGREDIENTS:
3 Eggs
1/4 cup Cream
1/4 cup Milk
2-3 tsp Vegeta Vegetable Stock Powder
Pinch Salt &Pepper
1/4 cup Ham or Bacon (Chopped)
1/4 Onion (Diced)
1/2 cup Grated Cheese
1 packet Simply Wize GF Puff Pastry
METHOD:
1. Preheat oven to 210ยฐC.
2. Beat eggs, milk, cream, vegeta and salt & pepper.
3. Grease muffin tin.
4. Roll pastry to desired thickness and cut with circle cutter.
5. Line each muffin hole with pastry.
6. Divide ham, cheese and onion into each muffin hole and spoon over egg mixture.
7. Bake for 20-25 minutes.
Yummm! ๐
's Creamy cheesy vegetable gnocchi ๐
I added garlic to a pan, added some vegan chickโn stock, some cream and some dried herbs. Then I added a jar of sun dried tomato pesto and combined well. Next, some roasted cubed pumpkin, baby spinach leaves and bring that to a gentle simmer.
I then added some gnocchi. After cooking for approx. 5 โ 7 minutes, I added some grated plant-based cheese, add some cracked black pepper. Serve and top with toasted pine nuts.

's Roasted Veggies caravan style! โบ๏ธ๐
So simple, summery, nutritious and satisfying!
I donโt have an oven in my caravan, but I do have a microwave, stove top and a grill! So this is what I did:
1. Diced sweet potato and golden summer squash and steamed them in the microwave for 5 minutes.
2. I then seasoned them (with some vegetable stock and a drizzle of olive oil) in the same glass container and popped them under the grill for 10 minutes.
3. I boiled some cauliflower gnocchi from in a pan, drained the water once cooked and then added the โgrilled veggiesโ and some sliced cherry/grape tomatoes to the pan.
4. Stir everything together with a sprinkle of parsley flakes, a smidge of butter and a squeeze of lemon! ๐ฑ
If you like chilli, definitely stir through some dried chilli flakes too! ๐ถ โ๐ฝ
And some sliced green olives wouldnโt go astray either! ๐โฆ just add it all! ๐๐ฝ

's PESTO & CHICKEN ROAST PUMPKIN GNOCCHI ๐ฑ
Pumpkins are nutrient dense, high in vitamin A, antioxidants & beta-carotene. Great for eye and skin health and are just delicious all round ๐

's LAMB & HARISSA SAUSAGE ROLLS
This filling includes good quality lamb mince mixed with harissa for spice, toasted pine nuts for crunch, rosemary and fennel seeds for aroma plus a few extras to keep your tastebuds tinglingโฆ These are far from your average ๐คค Using our GF puff pastry!

's CAULIFLOWER GNOCCHI W/ PORK, FENNEL & BROCCOLINI ๐ Yummm!
Here's the recipe:
For the sauce:
1 tbsp garlic EVOO
1 tbsp chilli EVOO
6-8 spring onion, green part only, chopped finely
1 jar of tomato and basil passata
Mixed herbs, to taste
Thyme, to taste
Oregano, to taste
Fresh basil leaves, to taste
Salt and pepper, to taste
For the Pork, Fennel and Broccoli:
6-8 stalks broccolini, chopped
200g pork and fennel sausage, case removed and broken up into mince
Sage leaves, to taste
Gnocchi:
1 packet cauliflower gnocchi
Fresh basil leaves, to serve
Parmesan, to serve
To make the sauce, add in the oil to a saucepan & allow to heat. Add in the spring onion & and fry off until fragrant. Add in the tomato passata + the herbs & stir. Bring to the boil, reduce heat & simmer for 20 mins. Season with salt & pepper. Allow to cool.
To make the pork, fennel and broccoli, heat a medium pan with some more garlic oil. Add in the mince and broccoli and fry off. Add in sage.
To make the gnocchi, cook as per packet instructions. Drain.
To assemble, add the drained pasta back into the pot used to cook gnocchi. Add some sauce (noting you will have leftover that you can place in the fridge or freezer in a container). Add in the pork, fennel and broccolini. Toss to combine and divide into two bowls. Top with fresh basil and Parmesan and enjoy ๐
's Spinach, ricotta and fetta pie using our GF puff pastry ๐ฅง๐
's Feta & Spinach Puff Pastries ๐
What youโll need:
500g chopped and frozen spinach, defrosted
200g feta, crumbed
4 spring onions, finely sliced
4 sheets Simply Wize GF puff pastry, defrosted
2 tbs almond milk
Sesame seeds to sprinkle on top
What youโre gonna do:
Pre heat oven to 200 degrees C
In a pan, add some olive oil. Add spring onions, spinach salt and pepper. You may need to spoon out some of the water from the spinach. Cook for 3-5 minutes
In a bowl, add spinach mix and crumbed feta. Gently stir
Slice the pastry sheets into 2 (you should have 8 now)
Scoop a heaped tbs of the mix into the centre of each sheet
Gently fold each sheet closed and using a fork, seal the edges
Lightly brush with milk, top with sesame seeds
Bake for 20-25 minutes or until golden
Enjoy and share this with a friend who would equally love them ๐คค๐

's Smokey tomato rice with beans ๐
This easy one pot meal is vegan, gluten free and SO DELICIOUS. I've used napolitana pasta sauce for the rich tomato flavour that goes so well with smokey spices and olives. Don't forget to follow for more gluten free recipes!
Serves 4 generously ๐
1. Saute 1 sliced onion until soft
2. Then add:
2 cloves crushed garlic
1 tsp sweet paprika
1 tsp oregano
1/2 tsp smoked paprika
Saute for 30sec
3. Then tip in:
2 diced carrots
2 sliced red capsicums
1 cup peas
250g rinsed brown rice
1 tin drained rinsed red kidney beans
1 tin drained rinsed chickpeas
1 500ml jar napolitana pasta sauce
500ml vegetable stock
Stir everything together and put the lid on. Cook on a low simmer for 30mins
Then remove the lid, add 1/4 cup olives and cook for another 15mins, stirring occasionally, until liquid has absorbed and rice is tender.
Serve with lemon juice and chilli flakes
Perfect on its own or as a side to some bbq vegan sausages!
's Smoked Salmon Pizza ๐๐
- Use our Crusty Bread Mix for the base. Pre-cooking for 5-10mins.
- Top pre-cooked pizza base with cream cheese mix (cream cheese, garlic & dill).
- Top with smoked salmon, red onion, capers and desired amount of cheese.
- Cook until cheese is golden.
- Sprinkle with baby spinach and rocket leaves to garnish.

Let's make Gnocchi Chips! ๐โจ It honestly has the perfect crunch and it's sooo easy to make! ๐ Ingredients: Simply Wize Spinach gnocchi ๐ Simply Wize Pumpkin gnocchi๐ 1 cup of pesto or any sauce of your choice 1 teaspoon each of seasonings of choice 1 cup of mozzarella cheese A handful of fresh basil Method: Preheat the oven to 180 degrees celsius. Bring a large pot of salted water to a boil. Throw in the Simply Wize gnocchi and cook according to package directions. Reserve at least 1 cup of pasta water and then drain. Mix gnocchi in any sauce of your choice until evenly coated. Add seasonings if needed. Spread in one even layer on a baking sheet and cover with cheese. Place in oven for 15 to 20 minutes or until golden brown and crunchy. Optionally take them out halfway to flip them for even more crunch!๐ฅ Top with fresh herbs and enjoy hot. ๐ฑ
Cookies โnโ Cream Mocha Rice Porridge! @peanut_my_butter made this wonderful looking dish! โบ๏ธ Follow the recipe below: Cook 40g chocolate rice porridge as per packet instructions. Stir in 25g of you favourite supplement powder In a separate bowl, mix 80g of vanilla yoghurt & 15ml vanilla sugar free maple syrup (or 1tsp vanilla extract) with 15g vanilla protein & top onto rice porridge.
