Il Custode means "The Guardian", and this Chianti Classico PDO oil truly guards the soul of the region. Made by the Pruneti family, custodians of these Tuscan hills for over 160 years.

Fresh artichoke and rocket lead the way, with green almond, cut grass and soft herbs layered underneath. Medium intensity, well balanced bitterness and a peppery finish that builds gently on the throat.

Recognised in Flos Olei 2026 as one of the best PDO oils in the world. This isn't just olive oil, it's a legacy in a bottle.

DID YOU KNOW 🚨 Colour doesn't matter. If colour told you anything about quality, professional tasters on a quality sensory panel would use a clear glass to help them ascertain the quality of the oil - instead, they must use a blue or dark coloured tasting cup to not inadvertently allow the colour to influence their judgement.

Four of the world's best extra virgin olive oils, side by side, all completely different shades of gold and green. If colour told you anything about quality, these wouldn't look nothing alike.

What actually matters is what's in the bottle. Fresh harvest, careful milling, genuine quality, that's what makes an oil exceptional, not what colour it pours.
