Bobs in charge of dinner tonight and we had the classic bangers and mash.

These sausages were lovely Angus beef sausages, and at 2 packs for $12, super affordable.

Added some low carb potatoes 🥔 and gravy we made last week from the freezer 🎉🎉

I did ask if he wanted to add some broccoli 🥦 for some greens but “nope, just the classics”

Anyhow, I’m happy to be fed by someone else

While having a long chat with a friend this afternoon I made a delicious chicken stock and soup.

It felt right to use up this chicken, and make a hearty, healing ❤️‍🩹 soup 🥣

Chicken stock (wasn’t cooked long enough to be called broth), 1 onion, 2 carrots, 1 zucchini, 4 garlic cloves, 2cm ginger, and soy sauce to balance the salt.

There wasn’t much chicken left on the bones but there was enough for soup 🍲

The onion gravy came it handy from last week, for a quick sausage and onion gravy dinner.

Added to the no fail mash, and some steamed carrots for a lovely hearty filling dinner.

Delicious fat breakky sausages from our favourite butcher Batavia Coast Butchery.

I found some pork shoulder in the freezer, it was already cut into chunks.

Bob added a dry rub, and smoked them low and slow for a couple of hours. Half with Apple wood, half with Island Dust.

The family was split as to which one was better! We served this with zesty salsa with corn, tomatoes and onion in it.

We ended up buying a couple of portions of meat for the week from our favourite butcher Batavia Coast Butchery.

2 delicious steaks
1 kg fat sausages
1 kg BBQ sausages

Seems like a lot of sausages but we have a few other things to space it out with so it makes a good mix.

With half a kg of BBQ sausages we made sausage rolls. To make these go further we added 4 grated carrots and a very large onion. We cooked them down a little, and added curry powder.

To make it a little more decadent we added grated cheese to the final mix. Binding of eggs and fresh bread crumbs to soak up all the flavour.

In the freezer we use 3.5 OLD puff pastry sheets, but hey they did the job!!

These are for school lunches for the first couple of days.
