So we're heading off on the road again this week - a quick stop in Korea first, then over to Japan for FoodEx 2026 next week!

There's nothing quite like getting Legacy 1841 in front of people who are genuinely interested in what Australian producers are making. We love it!

Scott has taken our full range along for the ride, and we can't wait to let our jerky do the talking.

Texture matters more than people think with jerky and biltong.

If it's dried too hard, you end up chewing forever.

If it's underdone, it doesn't keep properly and feels way too soft in your mouth.

We aim for somewhere in the middle - firm but not tough, with enough moisture left that it's actually pleasant to eat.

Getting that balance right means we have to pay close attention during the drying process - our team is trained to know what works best, so we can tweak it as needed and deliver you the best jerky possible!

We like to keep things simple aroud here. Why?

Because we truly believe that simple is best.

That's why we've kept our range to three flavours for now - they're the ones we know our customers love!

🟤 Original - for true beef flavour purists
🟤 Black Pepper - for those that like a little spicy kick
🟤 Beef Biltong - because a lot of jerky lovers, like us, have a penchant for biltong too!

All three are fundamentally are made the same way - slow dried and perfectly smoked while we keep a close eye on the process.

But not to stand still - we're always tinkering with new things in the background... new flavours, new styles and new ways of satisfying our customers!

So if you've tried any of our current range, we'd be interested to hear what you think.

And if there are any new flavours you'd like to see, send your ideas our way - we might just test them out!

Our animals spend their lives enjoying the fresh, open air of South Australia’s Fleurieu Peninsula - no crammed feedlots, no GMOs and no cutting corners.

These are *our* cattle - so we want to ensure they're happy, healthy and raised properly on our land.

Why? Because we truly believe you can taste the difference between beef that's been raised well and beef that hasn't.

That's why we're farmers first. Everything else follows on from that.
