Quick bake up this morning to hopefully last me till the end of the week 😂
Recipes all from Cookidoo

Anzac Biscuits - slightly over cooked them 🙊
Soft cinnamon doughnuts - doughnut oven tray from the mix shop
Peanut butter chocolate chip slice - also used up some biscoff (this is yummo, I may have had a taste already)
30 second whole orange cake - yep you use the whole orange, we had a very sad looking one that no one would eat in the fruit bowl

This pretty much took me 1.5 hours and I used 1 bowl and 1 Thermomix. All for seeding and school lunchboxes 💪🏼

Tonight’s dinner = ‘Fake Away’ Mongolian Beef Noodles in the Thermomix 🤤🔥

So easy, so full of flavour, and best of all… it feeds a heap of people 🙌 Perfect for busy nights or when you’ve got a crowd to feed or if you want left overs for lunch. We had the oval thermoserver as left overs tonight 🙌🏼

Tender beef, rich sauce, and minimal effort thanks to the Thermomix 👌 I also used three different noodles as that’s what I had in the cupboard.
Honestly one of those meals that tastes like you’ve spent hours on it (but you haven’t 😉)

The request for lunch today was noodles!
With some Bok Choi and some frozen shredded chicken I wanted to use I found a recipe on Cookidoo!
Super quick to make and literally took only 15 mins to make.

I made a couple of changes
Added more noodles but didn’t cook them in the recipe like it asks I just added them to boiling water to cook.
Added less pepper but still a bit too much so will add a bit less again next time.
Added more Bok Choi instead of adding the mushrooms

Eldest gave it a 7/10
Second gave it a 6.5/10
Youngest (who made the request) gave it 1000/1000

You could also add in any thing you have like spinach, kale, snow peas or mushrooms.

Today I wanted to use up some stray ham, spring onion and yoghurt that has gone runny (cause my usual starter that I use has changed and now doesn’t work 🤷🏽‍♀️)

So I quickly whipped up some 2 ingredient dough and made the kids ham and cheese scrolls for lunch. I also made the Garlic and Herb Dip using up a stray spring onion and some more yoghurt for a pick plate along side the scrolls. Lunch made in no time at all = happy kids!! They all had a small try of the dip with no one absolutely loving. All the scrolls went so that was a win!

Bit of Easter goodness today! Herb & Garlic Pull apart bread, Kim chi spuds, roast lamb and beef brisket! So good! Salad...
