Cold mornings are good news for truffles. ❄️🍄
Black truffles need winter frost to properly ripen and develop their extraordinary aroma and flavour. Those crisp, icy mornings trigger the final stages of maturation underground, transforming truffles from firm and undeveloped into the rich, fragrant delicacies chefs dream about.
That’s why truffle season arrives in the depths of winter. The colder the nights, the more exciting the season becomes. At the moment, we have just had a few cold nights and the trees are only just starting to turn golden.
Right now beneath the oak and hazelnut trees at Gulaga Gold, this year’s truffles are waiting for more frosts to slowly ripen. The early truffle should be ready from 9 June.
