Established in 1988, Jesmond Fruit Barn has a long history of supplying the highest quality, freshest & tastiest produce to the greater Newcastle, Hunter Valley & Port Stephens Area. You learn a lot from experience. Over the last 20 years we have learned a lot about what our customers like. We listen to them and we learn from them. We put our knowledge to good use when it comes to making sure you will find exactly what you’re looking for in our store! As tastes and times change we ensure we change to keep right on track with the best quality and variety of products. This includes the very latest changes to our store. Refrigerators and shelves full of new deli products and new cooking ingredients including spices, sauces and condiments from around the world!

Smoky BBQ corn with a garlic-lime butter. Perfect for a summer spread! (details below) 🌽

INGREDIENTS
• 4 corn cobs, husked
• 2 tablespoons olive oil
• 60 grams butter, melted
• 2 garlic cloves, crushed
• 1 lime, juiced and zested
• 0.5 teaspoons salt
• 0.3 chilli flakes
• 0.3 cups fresh coriander, chopped
• 0.3 cups parmesan or feta, crumbled (optional)

STEPS
1. Prep the corn: Preheat the BBQ to medium-high heat. Brush 4 corn cobs, husked lightly with 2 tablespoons olive oil.
2. Grill the corn: Place corn directly on the grill. Cook, turning every 2-3 minutes, until charred in spots all over.
3. Make the butter: While the corn cooks, mix 60 grams butter, melted, 2 garlic cloves, crushed, and the juice and zest of 1 lime, juiced and zested in a small bowl.
4. Baste: Remove corn from the grill and brush generously with the garlic-lime butter.
5. Finish and serve: Sprinkle with 0.5 teaspoons salt, 0.3 chilli flakes, 0.3 cups fresh coriander, chopped, and 0.3 cups parmesan or feta, crumbled (optional) if using. Serve hot.

NOTES
For extra flavour, soak the corn in cold water for 10 minutes before grilling to help it steam slightly inside the husk. Also great finished with a wedge of lime on the side.

Looking for a quick, no-cook side that lets ripe tomatoes shine? Give this salad a whirl 🍅 (details below)

INGREDIENTS
• 4 ripe tomatoes, sliced or chunked
• 0.3 red onion, thinly sliced
• 3 tablespoons olive oil
• 1 tablespoons balsamic vinegar
• 0.3 cups fresh basil leaves, torn
• 0.5 teaspoons salt
• 0.3 teaspoons black pepper
• 0.3 cups feta cheese, crumbled (optional)

STEPS
1. Arrange tomatoes: Lay out 4 ripe tomatoes, sliced or chunked on a serving plate along with 0.3 red onion, thinly sliced.
2. Dress it: Drizzle with 3 tablespoons olive oil and 1 tablespoons balsamic vinegar.
3. Season and finish: Sprinkle with 0.5 teaspoons salt, 0.3 teaspoons black pepper, and top with 0.3 cups fresh basil leaves, torn and 0.3 cups feta cheese, crumbled (optional) if using.

NOTES
Best made just before serving so the tomatoes stay fresh and don't get watery. Great alongside grilled meats or with crusty bread.
