We’ve just landed something special — Kiwami Inside Skirt MB9+.

“Kiwami” translates to Ultimate Excellence, and these certainly live up to the name. Skirt is one of my favourite cuts, and the level of marbling in this batch is outstanding — rich, buttery, and full of flavour.

I couldn’t resist putting some straight over some coals with some quick skewers… absolutely next level.

We’ve got a limited release available:
- Small number of whole chilled packs (perfect for cutting and portioning your own way)
- 250g Yakiniku packs (frozen, ready for easy grilling)

A long weekend is a great excuse to have some friends over and cook a Porchetta. Slow cooked in the oven before putting on the rotisserie for the perfect crackling !

Black Onyx SB5 Picanha. The cattle are grain fed for 380 days which produces a very succulent and rich flavour. Pairs extremely well with a Chimichurri to balance the fat content.

I have a pack of Imperial Blossom Deckle MB8-9 spare from a larger order. It needs some trimming but is excellent value and has fantastic flavour.

I typically use this for Yakiniku or Wagyu Risotto with Sh*take and truffle oil.
