All set up and ready to go Wahroonga Food & W**e Festival on a beautiful spring day. We have three varieties on tasting including our new 2025 Elderflower Mist Sparkling Classic. We are super excited about this vintage as we think it is one of our best yet. Like our 2022 and 2023 vintages it is slightly sweeter than our 2024 and not as bubbly so really easy drinking- perfect for a hot day. sparklingwine

It is the 4th Saturday of the month, we are back Carriageworks Farmers Market and super excited to be out tasting our new vintage. Our 2025 Elderflower Mist Sparkling Classic is one of our best yet. There is a little more residual sugar which lifts the elderflower flavour and translates into somewhat less bubble than our 2024. The weather is getting warmer so now is the perfect time to try our range of all natural great tasting low alcohol Elderflower Mist Sparkling or stock up for those lazy afternoons out on the deck.

People often assume the elderflowers are there simply for flavour....and they certainly do give Elderflower Mist its floral character 🌸
But they also carry the naturally occurring wild nectar yeasts that help get fermentation started - the flower isn’t added to an already-made alcoholic drink. It is there at the beginning.
Flavour and fermentation come from the same place, our flowers 🌸

It is the second Saturday of the month and we are back Carriageworks Farmers Market with our unique all natural great tasting low alcohol Elderflower Mist Sparkling. It is a bit overcast and drizzly today but the hot weather is not far away so it is the perfect time to stock up on our sparkling. If you have not tried it yet, why not come by, say hi and do a tasting.

Spring flowers are only part of October here....

We’re also getting on with the practical work that needs doing before summer: mulching around parts of the property, checking pumps, and doing the machinery checks and maintenance that give us the best chance everything will work if it becomes critical during fire season.

The reason for doing it now is simple - that it isn't urgent yet. We don’t know what summer will bring, but we do know this year is already warming up quickly and it's been drier - as we're in an El Nino cycle. So for now we prepare early and keep paying attention.

Flowers are opening. Ferments are beginning. Markets keep coming. And the farm systems we may need later still need checking and maintaining.

That’s part of October here, and it doesn’t stop once summer arrives.
