This rich, sherry-led wh**ky has been matured in ex-Bourbon & Oloroso casks in outback Queensland, using a unique arid ageing process of maturation, adding layers of depth & complexity.

Expect sweet ginger, honey & sandalwood on the nose, leading into warm stewed fruit, almond & vanilla cream, with a gentle spice & lingering sweetness.

Spotlight on Lindores Abbey Distillery's 'The Cask of Lindores' - one of the whiskies in this month's flight.

The second release in this Scottish distillery's popular 'Casks of Lindores' series was matured entirely in Spanish red w**e casks that were shaved, toasted & re-charred, bringing plenty of ripe fruit & spice, without burying the malt underneath.

Nose: apricot jam, ripe plum, orange peel, creamy toffee, custard & a dusting of cinnamon.

Palate: red berries, damson, dates & honeyed malt, with treacle, roasted nuts, earthy spice & a touch of toasted oak.

Finish: medium to long with caramel, honey, dried fruit, baking spice & gently drying oak.

What happens when good wh**ky meets a cask that isn't quite what you'd expect? We're finding out in this month's flight...

draws rich fruit & spice from re-charred red w**e casks. There's plenty of red plum, orange peel, liquorice & toffee on the nose, with rich red fruit notes (prune & damson) on the palate.

layers its Australian single malt with the character of Pinot oak. Expect malt, plum & dark fruit on the notes, with freshness & depth in the finish.

**ky takes a mature Speyside wh**ky in a surprising direction through Jamaican rum casks. It's grapefruit, white pepper, mango & lime on the nose, with the rum sweetness shining through on the palate, alongside flavours of dried mango, green banana, vanilla & aniseed.

Say hello to our Bottle of The Month - Callington Mill's El Sol.

El Sol is the first of the three core range Callington Mill single malts, each bottled at 46% & matured in a different style of Iberian fortified w**e cask.

This one is matured in Spanish sherry casks - expect notes of toasted grain & light caramel, lifting to a biscuit-y nose. The palate is malty & warm, with gentle spice, finishing long with peppery sweetness & a touch of smooth richness.

Roam Distillery has gone *all in* on provenance & small-batch production & it shows in this month’s Rum Cask release 👏

This drop is distinctly tropical, rich & approachable. We reckon you’ll love it 😉

🥃 On the nose: caramelised brown sugar, vanilla bean & toasted oak, with ripe banana, pineapple & honey.

🥃 On the palate: butterscotch & vanilla, with banana, mango & grilled pineapple, followed by soft oak & cinnamon spice.

🥃 Finish: Long & warming, with caramel, toasted coconut & brown sugar, fading into dried fruit & gentle spice.
