Crustless Coconut Pie (Toasted-Top Style)

Ingredients

½ cup unsalted butter, melted

¾ cup granulated sugar

⅓ cup all-purpose flour

1½ cups whole milk

4 large eggs, room temperature

1 teaspoon vanilla extract

¼ teaspoon salt

2 cups sweetened shredded coconut

Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.

Whisk melted butter and sugar until smooth.

Add eggs one at a time, whisking well after each.

Stir in milk, vanilla, and salt.

Whisk in flour until fully smooth.

Fold in shredded coconut.

Pour into the prepared dish and level the top.

Bake 50–55 minutes, until the top is deep golden and the center is just set.

Cool at least 45 minutes before slicing.

Ingredients
For the Pie Crust:
1½ cups all-purpose flour
½ cup unsalted butter, chilled and cubed
¼ cup granulated sugar
1 cold egg yolk
2 to 4 tablespoons ice water
For the Strawberry Filling:
4 cups fresh strawberries, hulled and halved
¾ cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Whipped Cream Topping:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
Prepare the Pie Crust: In a large mixing bowl, combine flour and granulated sugar. Add chilled, cubed butter. Use a pastry cutter or fingertips to mix until the mixture resembles coarse crumbs. Add cold egg yolk and mix well. Gradually add ice water, one tablespoon at a time, until dough holds together. Wrap and refrigerate for 30 minutes.
Preheat the Oven: Preheat to 375°F (190°C) while the dough chills.
Roll Out the Dough: Lightly flour a surface and roll dough to 1/8-inch thickness. Fit it into a 9-inch pie pan, trim edges, and poke holes in the bottom with a fork.
Bake the Crust: Place on a baking sheet and bake for 20 to 25 minutes until golden.
Prepare the Filling: In a bowl, mix strawberries, sugar, cornstarch, lemon juice, and vanilla. Transfer to the baked crust.
Chill and Set: Add a domed lid (if desired) and refrigerate for 2 hours.

Delicious Pot of Pinto Beans to eat with My Tortillas
My house smells heavenly............ I apparently didn't make enough. They were gone in minutes, seriously. So yummy! 😍
Ingredients
* 2 cups dried pinto beans
* 8 cups water
* 1 onion, chopped
* 3 garlic cloves, minced
* 1 smoked ham hock or 4 slices bacon (optional)
* 1 teaspoon salt
* 1 teaspoon black pepper
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 2 tablespoons olive oil
* fresh cilantro for garnish
Instructions
1. Rinse and soak the pinto beans overnight. Drain before cooking.
2. In a large pot, heat olive oil and sauté onion and garlic until fragrant.
3. Add beans, water, ham hock or bacon, salt, pepper, cumin, and chili powder.
4. Bring to a boil, then reduce heat and simmer for 2–3 hours until beans are tender.
5. Stir occasionally and add more water if needed.
6. Serve hot with warm tortillas and garnish with fresh cilantro.

Chow Chow (Old Fashioned)
Ingredients
1 small cabbage, chopped
6 to 8 green or red tomatoes, chopped
6 medium bell peppers, chopped
6 large onions, chopped
2 hot peppers, chopped
3 cups sugar
5 cups white vinegar
1/4 cup salt or pickling salt
How To Make CHOW CHOW
Put all ingredients in a large pot and bring to a boil. Reduce heat and cook for 20 to 25 minutes or until desired tenderness is achieved.
This recipe is designed to be put in pint jars and sealed. Makes 8 to 9 pints. But you could cut recipe down to use for one night of dinner.

Cookie Bar Base
1 cup unsalted butter, softened
2 oz cream cheese, softened
1¾ cups sugar
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
¼ teaspoon coconut extract
2½ cups all-purpose flour
½ teaspoon baking powder
1 teaspoon salt
Coconut Cream Frosting
1½ cups sweetened shredded coconut, divided
½ cup unsalted butter, softened
3 oz cream cheese, softened
2 cups powdered sugar
½ teaspoon coconut extract
⅛ teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
Beat butter, cream cheese, and sugar until light and creamy.
Mix in eggs, egg yolk, vanilla, and coconut extract.
In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients.
Spread batter evenly in pan and bake 25 minutes. Cool completely.
Spread ½ cup coconut on a baking sheet and toast at 350°F for 4–6 minutes, stirring once. Cool.
Beat butter and cream cheese for frosting until smooth.
Add powdered sugar, coconut extract, and salt; mix until creamy.
Spread frosting over cooled bars.
Sprinkle with remaining coconut and toasted coconut.

2 lbs ground beef
1 sleeve buttery crackers, crushed
2 cups shredded cheddar cheese
1 small onion, finely chopped
1 green bell pepper, diced
2 large eggs
1 can tomato sauce
1/2 cup ketchup
1 tbsp worcestershire sauce
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp black pepper
1 tsp salt

for the topping
1/2 cup ketchup
2 tbsp brown sugar
1 tsp mustard

instructions

1. preheat oven to 375°F (190°C). lightly grease a loaf pan or baking dish.

2. in a large bowl, combine the ground beef, crushed crackers, cheddar cheese, onion, bell pepper, eggs, tomato sauce, worcestershire sauce, and seasonings. mix until fully combined.

3. shape the mixture into a loaf and place it into the prepared pan.

4. in a small bowl, stir together the ketchup, brown sugar, and mustard. spread evenly over the top of the meatloaf.

5. bake for 55–65 minutes, or until cooked through and the center reaches 160°F (71°C).

6. let rest for 10 minutes before slicing and serving.

Ingredients
8 chicken pieces (drumsticks and thighs)
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
Vegetable oil for frying

Instructions
Place the chicken in a large bowl and pour the buttermilk over the top. Cover and refrigerate for at least 4 hours or overnight for the best flavor and tenderness.
In a separate bowl, mix the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
Remove the chicken from the buttermilk and dredge each piece in the seasoned flour until fully coated. Let the coated chicken rest for 10 minutes so the crust sticks better.
Heat about 1 inch of vegetable oil in a large cast-iron skillet over medium heat until hot.
Carefully place the chicken into the skillet without overcrowding. Fry for about 12–15 minutes per side, turning occasionally, until the coating is deep golden brown and the chicken is fully cooked inside.
Transfer the fried chicken to a wire rack or paper towels to drain excess oil. Serve warm.
