Our dream is to live self sufficiently on our own land; rearing our own animals for meat and eggs, growing most of our own fruit and vegetables, and turning our waste into biogas to fuel our cooking and heating. We are currently building a a mud brick house, brick by brick, and documenting each day of our journey.

The last cow we had butchered was a very fat, old cow, which means there is a lot of excess fat on all of the meat. It doesn’t go to waste though! We render it and save it for our daily cooking fat. This is from a batch of ribs I slow cooked. The jelly / broth will get separated off and used in bolognese. As this is not true rendered fat, it won’t store as long however if we use it to replace all cooking fat needs, I am sure it will get used up before it spoils 😀 This would cost you a fortune to buy though!
