Eden Whisky

Eden Whisky Eden whisky is distilled, crafted, matured and bottled nestled at high altitude in the foothills of kunanyi (aka Mt. Wellington), Tasmania.

WHAT MAKES US SPECIAL? Is it the magic of kunanyi, Tasmania’s most recognisable peak and a renowned spiritual symbol since time before time? Is it the purity of the water, cascading through streams and gullies, filtered through rocks formed aeons ago? The wonders of the land, unspoilt, offering up its riches? Fire Horse isn’t just for special occasions. It’s for the moments in between.
A drink shared with friends, poured at the end of a long day, opened around the fire, or enjoyed simply because the time feels right. Rich, warming and quietly powerful, Fire Horse was made to be enjoyed, not saved forever.

But this limited Eden release won’t be here for long. As the Year of the Fire Horse draws on, bottles will become harder to find. Collect one now before the year is up, open it when the moment calls, and share Fire Horse the way great whisky should be, with good company and good conversation. 🔥

Celebrating the farmers, maltsters, and distillers who bring Tasmanian barley to life.
Every bottle of Eden begins in the field. The story of our whisky starts with Tasmanian barley grown in some of the cleanest air and richest soils in the world. The island’s long summer days and cool nights create grain with distinctive sweetness and texture.

Eden works closely with local growers who share our commitment to quality and sustainability. Their knowledge of the land ensures that every harvest delivers consistency and flavour that form the heart of our spirit.

When the grain reaches the distillery, it is milled, mashed, and fermented with care.
By the time it becomes whisky, it has travelled through many hands, each one adding care and precision.

From grain to glass, this collaboration between grower and maker defines Eden. It is the taste of Tasmania, cultivated with respect for the people and the place that make it possible.
Here’s cheers to the farmers and malsters that help us to make great spirit.

It’s that time of year in Tasmania when the slow gentle rain falls in a constant veil across kunanyi/Mt Wellington and forested vallies around Hobart.

Walking through the streets of Hobart Town you’ll find yourself a little soggy without an umbrella, but it’s also why being here is so special.

Our seasons are distinct and the pace is perfect for visiting nearby waterfalls and watching the rain fall.

We of course love the rain. It’s this very essence that provides the lifeblood to Eden Whisky. And just like that (well over some years in the barrel), that pure water is magically turned into Eden whisky.

So yeah, we love this time of year. It’s our investment in future deliciousness.

Some whiskies deserve their own soundtrack -
Meet Sonnet - a bold, lively Tasmanian single malt that plays like your favourite late-night record. It could be a classic 50s jazz, a tragic 80s number (we love those), or just something contemporary that you love.

Now turn it up and pour a whisky. That first pour of Sonnet will catch the light with deep mahogany and henna tones. Its aroma opens like the first note of any great song and you're tasting bright yuzu, warming oak and a crack of spicy black pepper before building into layers of blackcurrant coulis, caramelised yuzu and gentle smokiness.

Crafted using award-winning Australian new make spirit and matured in American Oak ex-Shiraz casks from South Australia, Sonnet is full, rich and beautifully expressive from start to finish. It honestly deserves its own aria.

Perfect for vinyl nights, fireside playlists, and conversations that last until the final track.

Chase Away the Tasmanian Chill with a Glass of Allegory -
When the Tasmanian chill rolls in, there’s nothing better than a dram that warms you from the inside out ❄️

Meet Allegory, a beautifully crafted Tasmanian Single Malt Whisky produced by Eden.
Our favourite way to crack open a bottle of Allegory is on those cold nights, as the rain taps against the window, the fire crackling nearby and the night air thankfully left outside.

Snuggle down into your favourite chair, pour a glass and take in those aromas of vanilla bean, honeycomb and warm spice, followed by the rich sherry cask notes. Matured in premium Spanish Sherry and Australian Apera casks, Allegory delivers rich layers of vanilla bean, honeycomb, crème brûlée and caramel, balanced with warming white and black pepper spice, citrus and delicate floral notes

It’s the kind of whisky you can drink for long conversations and slow evenings or those quiet moments where time seems to pause for a little while.

No surprise it picked up a Bronze Medal at the World Whiskies Awards 2023 🏅
Perfect for chilly nights and clever conversations. 🔥

In Tasmania, leaves are turning red and gold.
Our night air has that clean, cool edge and the days are getting shorter. That mist, so famous on our Authors Make whisky, starts to form on kunanyi/Mt Wellington and you know Autumn is here.
It’s the time of year where you start reaching for warmth. Fires get lit. Blankets come out. Evenings slow down.
And it’s when whisky makes the most sense.
At Eden, this season is part of the story.
Cooler air, longer nights all shape the character in the cask. The result is a whisky that leans into those autumn notes, richer, rounder, with a warmth that sits exactly where it should.
A glass at the end of the day. Something to settle into as the temperature drops.
Autumn and whisky. It just works.

The Derwent River is part of everyday life in Hobart. It starts up in the Central plateaus of Tasmania and makes its way down to the sea, running right through the middle of the state.

As it moves, it picks up everything that makes Tasmania what it is. Cold air, clean water, changing weather. It passes farms, bush, small towns and open valleys before reaching Hobart.

At this time of year, the river is fringed with the colours of autumn. The day starts a little bit later and the air is crisp as you make your way to the distillery.

For Tasmanians, the Derwent is more than just a river. It has always been a source of water, a working river, and a place people gather. It is part of the scenery we call home.

It is also something we like to share with visitors. From the ocean, up the source in Tasmania’s highlands it is beautiful and its depth brings a blue palate that must be seen to be appreciated.

Yes we love this place. Make sure you find the time to pick up a bottle of Eden, warm yourself by a fire and share a glass with friends.

Eden. Spirit to be shared.

We are very proud of all our whiskies, but Autograph is one that we keep coming back to.

It starts with our new make spirit, recognised as one of the best in Australia, and then lets the cask do its work. This release was matured in a American oak ex-bourbon barrel, giving it depth without losing balance.

What comes through is flavour that feels generous but controlled. You get vanilla and caramel up front, followed by citrus and spice building through the glass. On the palate it leans into orange caramel and sticky date, with just enough cinnamon to keep it lively. The finish is warm, with that signature black pepper note carrying through. Yum.

A big whisky, it has been released at 52.1%, with limited bottles drawn from the barrel. A small run, built on a spirit we know stands up, and a cask that has done exactly what we hoped it would.

Happy Easter!
We’ve added a dash of Eden Single Malt Whisky to our Naughty Easter Hot Chocolate to create a truly adults-only indulgence.
We used the spicy Eden Fire Horse, but this works beautifully with any of the Eden range.
Go on… be naughty.

-What you’ll need-
• 1 espresso
• 100ml hot milk (of choice)
• 2 tsp dark cocoa
• 1 mini egg (we used Cadbury)
• 15–30ml Eden Single Malt Whisky

-How to make it-
Warm the milk.
Add cocoa to your cup, then drop in the mini egg.
Pour in the hot milk, leaving a little room at the top, and stir gently until smooth.
Add a dash of whisky to taste.
Stir, give homage to the chocolate gods, and enjoy.

Best shared with friends… but no judgement if not. You may need seconds.

The story behind Eden's labels
When Eden began, our founders Dale and Claire, wanted the look and feel of the brand to reflect the island’s natural beauty and creative spirit.
They also knew that they wanted something different that would capture the imagination of people who purchased their whisky.
Welcome Tasmanian artist Sam Lyne!! Sam’s illustrations capture the mountain, the river, and the rhythm of the place we call home. His work has been recognised with a Diemen Award for Best Illustration.

For Eden then every bottle tells a different story. Look closely and you will see a still house in the mist, a wedge tailed eagle floating by, or something more ethereal.
The narrative behind Folklore, Authors Make or Sonnet will take you to a different place than Poetry or Allegory, and each illustration is a story in itself.

So when you choose an Eden Whisky you are not just buying a bottle of whisky, you are taking home a small piece of Tasmanian art and a story worth keeping. It's pretty special.

Your own Eden whisky gallery begins one bottle at a time. Start your collection here. https://edenwhisky.com.au/
