π Pizza Muffins π
Ingredients:
- 3/4 cup self raising flour
- 1 cup shredded cheese
- cracked pepper
- 1 tbsp dried Italian herbs
- 1 tsp garlic powder
- 2/3 cup milk
- 2 eggs
- 3 tbsp tomato paste
- 2 tbsp olive oil
- handful of finely chopped ham
- 6 cherry tomatoes, finely chopped
- handful of chopped capsicum, finely chopped - optional, omit or swap for other vegetable such as mushrooms, broccoli, corn etc
Method:
1. In a mixing bowl, place flour, cheese, pepper, herbs, and garlic and stir to combine.
2. In a small jug, combine milk, eggs, tomsto paste, and olive oil and lightly whisk. Add to bowl and mix well.
3. Add the finely chopped ham, tomato & capsicum to the mixture and mix well.
4. Spoon mixture into a muffin tray. I made 15 mini muffins and 6 standard muffins.
5. Bake in a 180C oven (20 minutes for mini muffins, 25 minutes for standard muffins).
