but delicious nonetheless!
What I love to cook when I don’t want/too tired to actually “cook”, excuse the oxymoron. Since the whole dish takes just 10-15 min max, that is seasoning, grilling/airfrying and plating. Pickled carrots I often have on hand and simple Coles potato salad, (which I jazz up often with extra pickled baby dill cucumbers and wholegrain mustard). Grilled on bbq veggies and grilled to caramel crust salmon finished in airfryer for 4min at 160C for this perfect pink flesh.
And the secret ingredient recently for me was this amazing chilli/ginger chutney by Txuputi (Melbourne). Simply calling it ginger/chilli paste does not give it justice, it’s so complex and unique and goes so well with everything, it’s ridiculous!
