Martika's Kitchen- still Hungarian at heart

Martika's Kitchen- still Hungarian at heart I think my friend can tell you that I have a few good recipes. We are all busy and here in Australia so many nationalities we have different foods.

Marta's Recipes- my friends tell me that I have a few good recipes.I love my Hungarian heritage and the dishes but living in Australia we have a great influence from asian countries like Vietnam, China and Indonesia to name a few. Then we have to look at costs involed - we dont have to spend $100 to make a great meal, and does it really cost $10 or under? Food additives are also our worst enemies!

Very easy recipe, grated zucchinni, chopped shallots, chopped dill, grated carrots, cottage cheese, a couple table spoons of grated parmisan cheese.
Note the more eggs you use the more veggies and cheese you add.
Salt and pepper.
If you want a base and are being health consious use the precooked brown rice, put on bottom of pan I used the silicone cup cake mould.

Enjoy

Another cheap and cheerfull hungarian dish Husos Risz tranlated into english is meaty rice. As a child I remember two versions my fathers favourite was the white version with only one herb added and that was marjoram. The version I have made is the red version with sweet paprika which i might add was made by a small trader and I must say I have never seen such beautiful red power that has held its colour fir nearly two years.
Recipe really is your basic paprikash/porkolt type wgere you sautee finely diced onion on lard or oil, add to that capsicom continue to sautee then add your meat and brown the meat well. Now i have had this dish with pork and chicken and im sure it work well with lam and and tender cuts. After browning add your paprika powder salt or vegeta or both, pepper, and marjoram and top up with water.
In this version i have used chicken mid wings, you can also add the little drum sticks this is popular with younger children the love the smaller peices and as kids do sometimes use fingers while theyre enjoying munching on the peices.
The amount of water depends of course on amount of meat, and if you like a wetter dish or drier I personally like this wetter so I add more water. To the meat add your rice. Once cooled note that the rice will absorb all you juices and knce you had added rice youll need a bit more salt in your seasoning.
In my pics below i have used approx 12 chicken peices, 1 onikn, 1 tablespoon paprika powder, a sprinkle of pepper, 1 table spoon of vegeta and 1/4 spoon of salt, 1 cup rice- medium grain, and about 1.6 litre if cold water, oil to sautee onion and diced capsicum. And half cup frozen peas.
Once your pot has started simmering cover and occassionaly stiring, never boil too much just gentle simmer taste your rice once soft turn off the stove. Now this didnt take lobg approx 25 minute once it started simmering when using meats other than chicken or any mince dont add the rice at the same time as meat, chicken cooks quickly beef or lamb and even pork would need to be on the tender side first.
Enjoy!

A quick dinner tonight.....asian San Chow Bow this recipe is my own not exactly to traditional asian version.
Mince is pork anyone that doesnt eat pork you can substitute chicken mince or beef and for vegetarian firm tofu.

500 grams mince,
1 larger onion finely diced,
Small carrot diced or in my pics red capsicum was used for colour,
1 small can water chesnuts
2 tablespoons crushed toasted peanuts,
3 to 4 table spoons oyster sauce,
1 tablespoon soy sauce(you can add more to taste),
1 tablespoon sesame oil,
1 teaspoon sugar,
1 crushed garlic,
1/4 cup water,
Iceberg lettuce leaves separated and wash to use as cups,
Optional chopped shallots, soaked rice vermicelli noodles say 2 cups full.
Any oil for sautee you onion on.

Heat your oil sautee onions, diced capsicum or carrots,
Once the onions are see through add mince and garlic sautee until mince chances colour and doesnt look raw.
Add oyster sauce, soy sauce, sugar and a little of the water and keep for another 10 min on low heat.
You dont want the water to totally evapprate so add a little more it is not a wet dish so dont add too much.

Taste you dish and adjust to your own taste.

Crush the peanuts and sprinkle on top.
