Ours are fermented for two days then boiled the proper Brooklyn way before they even see the oven. That's what gives you the chew, the crust, the whole point. Cut that corner and you're just making a bread roll with a hole in it 👀

Oy, the things we do for a good carb. Our Birria Bagel is loaded with slow-cooked beef – guajillo, ancho, onion, coriander, the works – piled onto a bagel, where it belongs. Served with a consommé of secreto spices for dunking.

Choose your own base, but our go-to is the Cheese & Jalapeño bagel: mozzarella-parmesan crust, subtle heat, built to hold its own against the sauce.
