Some bottles are impossible to replace.

N°4 Les Cochonnes by Emeline de Sloovere is one of them.

When we first discovered this Champagne, it immediately stood apart.

Not because it was rare.

Not because only 648 bottles were produced.

But because it made us stop and return to the glass.

Again.

And again.

That is often the first sign of a memorable Champagne.

Today, the producer is completely sold out.

Every bottle that remains has already found its way into someone else’s cellar, table or celebration.

What surprised us most was its ability to leave an impression long after the glass was empty.

Not through power.

Not through extravagance.

But through character.

The kind of Champagne that makes you wonder if opening the next bottle is a good idea because you know there may not be another one.

Champagne is often presented through bottles.

But its real story is written by people.

In this photograph are Hélène and Benoît Lemaire, the 4th generation of Champagne Fernand Lemaire.

Together, they are carrying forward a family legacy that began more than a century ago.

Hélène leads the winemaking.

Benoît oversees the vineyard and the many decisions that shape each harvest.

Different roles. Shared purpose.

What struck us during our visit was not only their expertise, but the genuine joy of working together to preserve something that has been entrusted to them by previous generations.

In Champagne, legacy is not about looking backwards.

It is about honouring the past while preparing the future.

Every bottle tells a story.

Behind some of the most memorable ones are families who continue to dedicate their lives to the same land, generation after generation.

Champagne is often associated with bubbles.

Yet what truly sets great Champagne apart is its remarkable aromatic complexity.

Depending on grape varieties, terroir, vinification and ageing, mature Champagnes can reveal an extraordinary range of aromas, from citrus and orchard fruits to delicate floral notes, brioche, toasted nuances and nuts.

The glass you choose plays an important role as well. A tulip glass helps concentrate aromas and allows them to unfold more completely, revealing layers that might otherwise go unnoticed.

Both of these Champagnes are made from 100% Meunier.

Both come from the Vallée de la Marne.

Yet they tell very different stories.

One reveals notes of orchard fruits, brioche and citrus.

The other leans toward white peach, toasted almond and ripe orchard fruits.

How is that possible?

Terroir is part of the answer.

Even within the Vallée de la Marne, differences in vineyard location, exposure and soils can influence how Meunier expresses itself in the glass. The region is known for its diversity of vineyard sites and styles. (Wikipédia)

But terroir is only the beginning.

The moment grapes enter the cellar, the grower’s vision begins to shape the wine. Harvest decisions, pressing, fermentation choices, ageing, reserve wines and dosage all influence the final expression.

This is what makes grower Champagne so fascinating.

The same grape.

The same region.

Yet two completely different interpretations.

Because great Champagne is not only a reflection of where it comes from.

Most Champagne professionals no longer use flutes.

For decades, the flute became the symbol of Champagne. Yet today, many producers, sommeliers and wine professionals prefer a tulip-shaped glass.

Why?

Because Champagne is more than bubbles.

A tulip glass allows aromas to develop, reveals greater texture on the palate and preserves elegant effervescence while directing aromas towards the nose.
