Your olive oil has been fighting the same enemy for 5,000 years: light and heat.
Long before “best by” dates, the Minoans on Crete were already sealing their olive oil in dark, thick clay jars - no glass, no light, nothing see-through. Later, the Egyptians buried their jars in cool sand. In Puglia, the capasoni kept oil the same way well into the 1900s.
Turns out they were onto something science has since confirmed: light and heat break oil down, wearing away the flavour and antioxidants that make good olive oil good. Left exposed, your olive oil just goes flat and stale.
It’s why every Olivetta container, painted glass, tin, or bag-in-box, is opaque by design. Not for looks, but because it’s what has always worked.
