Chocolate Cake Roll 😍😍
Ingredients:
For the Cake
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
4 large eggs
3/4 cup granulated sugar
1 tsp vanilla extract
2 tbsp vegetable oil
1/4 cup powdered sugar (for rolling)

For the Filling

1 cup heavy whipping cream
1/4 cup powdered sugar
1 tsp vanilla extract

For the Topping

1 cup semi-sweet chocolate chips
1/2 cup heavy cream

Instructions

1. Make the Cake

Preheat your oven to 350°F (175°C). Grease a 10x15-inch jelly roll pan and line it with parchment paper.

In a medium bowl, sift together flour, cocoa powder, baking powder, and salt.

In a large bowl, beat the eggs and sugar on high speed for 5 minutes until thick and pale. Add vanilla extract and oil, mixing gently.
Gradually fold the dry ingredients into the egg mixture until fully combined.

Spread the batter evenly into the prepared pan. Bake for 10-12 minutes, or until the top springs back when lightly touched.

While the cake is still hot, sprinkle powdered sugar onto a clean kitchen towel. Turn the cake out onto the towel, peel off the parchment paper, and roll the cake (with the towel) starting from the short end. Let cool completely.

2. Prepare the Filling

In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Gently unroll the cooled cake, spread the whipped cream evenly, and roll the cake back up without the towel. Place seam-side down on a serving platter.

3. Make the Chocolate Topping

Heat the heavy cream until just simmering, then pour over the chocolate chips in a bowl. Let sit for 2 minutes, then whisk until smooth.

Pour the ganache over the cake roll, spreading evenly.

Soft and Chewy Raspberry Sugar Cookies 🍪✨**
Ingredients:
- 1 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon lemon zest (optional)
- 2 1/2 cups all-purpose flour
- 1/2 cup raspberry jam or mashed fresh raspberries
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 1/4 cups granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon almond extract (optional)
- 1/4 cup granulated sugar (for rolling)
- 1/2 teaspoon cinnamon (for rolling)
- Fresh raspberries (for garnish, optional)
- Powdered sugar (for garnishing, optional)
Instructions:
1. In a medium bowl, whisk together the flour, baking soda, and salt. Set this mix aside.
2. In a large mixing bowl, beat the softened butter and granulated sugar together until you achieve a light and fluffy texture.
3. Add in the egg, vanilla extract, and almond extract (if using). Mix until everything is well combined.
4. Fold in the raspberry jam or mashed fresh raspberries and lemon zest (if using) until evenly mixed.
5. Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined. Make sure not to overmix!
6. In a small bowl, combine the sugar and cinnamon for rolling. Scoop about 1 tablespoon of the dough, roll it into a ball, and coat it in the sugar-cinnamon mixture.
7. Place the dough balls on a baking sheet lined with parchment paper, spacing them roughly 2 inches apart.
8. Preheat your oven to 350°F (175°C) and bake the cookies for 10-12 minutes or until the edges are firm but the centers remain soft.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Start your morning off right with these Cinnamon Roll French Toast Roll-Ups! They're easy to make, delicious, and perfect for a family brunch or a cozy weekend breakfast.
Ingredients:

6 slices of bread (white or whole wheat)
1 can (8 oz) cinnamon rolls (with icing)
3 large eggs
¼ cup milk
1 tsp vanilla extract
½ tsp ground cinnamon
2 tbsp butter (for cooking)
Powdered sugar (for dusting)
Maple syrup (for serving)

Directions:

Prepare the Cinnamon Rolls:
Open the can of cinnamon rolls and unroll each one. Roll them out flat with a rolling pin.

Make the Roll-Ups:
Take a slice of bread, place a cinnamon roll on one end, and roll it up tightly. Repeat with all slices of bread and cinnamon rolls.

Mix the Egg Mixture:

Homemade Chipotle BBQ Chicken Pizza

Ingredients:

Pizza Dough

▪️2 1/2 cups All Purpose Flour, sifted
▪️1/2 tsp Salt
▪️2 1/4 tsp Active Dry Yeast, Instant Dry Yeast
▪️1 tsp Granulated White Sugar
▪️1 cup Warm Water, temp range of 105° and 115°F
▪️3 tbsp Olive Oil, divided

Chipotle Chicken

▪️2 Chicken Breasts, medium, halved and pounded
▪️1 tsp Chipotle Seasoning
▪️1 tsp Garlic Powder
▪️1 tsp Italian Herb Blend
▪️1/2 tsp Salt, more or less to taste
▪️1/4 tsp Black Pepper
▪️2 tbsp Butter

Homemade Chipotle BBQ Chicken Pizza

▪️1 1/2 cup BBQ Sauce
▪️2 1/2 cups Mozzarella Cheese, shredded
▪️Chipotle Chicken, shredded
▪️1/2 cup Bacon, crumbled
▪️1/4 Red Onion, medium, chopped
▪️1 1/2 cups Cherry Tomatoes, halved
▪️1/4 cup Fresh Parsley, or cilantro, finely chopped

Chipotle Drizzle

▪️1/2 cup Mayonnaise
▪️1 clove Garlic, minced
▪️1 tsp Fresh Lime Juice
▪️1/2 tsp Chipotle Seasoning
▪️1/4 tsp Salt
▪️1/4 tsp Black Pepper

Instructions:

Pizza Dough

1️⃣ In a large mixing bowl, or bowl of a stand mixer fitted with the whisk attachment, add sifted flour, salt, and yeast. Whisk together until well combined on low speed. Proof your yeast prior to ensure it is alive. Then remove whisk attachment, and add dough hook.

2️⃣ In a small bowl, combine warm water and sugar. Mix together until sugar has dissolved. Slowly pour sugar water mixture into the flour mixture and mix on medium-low speed (speed level 3). Add 2 tbsp olive oil, and continue mixing all ingredients together on a low speed. Do so until the dough begins to stick together, forming a loose dough ball. The dough should have a tacky, putty-like feel.

3️⃣ Place dough ball on a clean and lightly floured surface, knead until a smooth dough ball forms, which bounces back quickly when poked. Then, place dough in a large mixing bowl, and drizzle with approx. 1 tbsp olive oil, ensuring surface is fully covered. Cover with dish towel or shower cap, placing in a warm area for an hour or until dough has doubled in size.

4️⃣ While dough proofs, prepare the toppings. After an hour, or when dough has doubled in size, remove from bowl and stretch to desired size.

Chipotle Chicken

1️⃣ Season chicken breasts with chipotle seasoning, garlic powder, italian herb blend, salt and pepper. Then heat 2 tbsp butter in a skillet over medium high heat. Place chicken breasts in the skillet and pan fry until golden on the outside and cooked through (flip at the halfway point). Remove from skillet, place on cutting board or plate and shred using 2 forks. Set aside.

Chipotle Drizzle

1️⃣ In a small mixing bowl, add all the ingredients – mayonnaise, garlic, lime juice, chipotle seasoning, salt, black pepper, stir until incorporated and set aside.

Homemade Chipotle BBQ Chicken Pizza

1️⃣ Preheat oven to 425 degrees Fahrenheit.

2️⃣ Add a layer of BBQ sauce on the prepared pizza, then add mozzarella cheese, shredded chipotle chicken, bacon crumble, red onion, cherry tomatoes, and fresh parsley or cilantro. Place in oven and bake for 12-15 minutes or until edges are lightly golden, middle baked through and cheese melted. Remove from oven, add Chipotle drizzle, slice, serve and enjoy!

Pineapple Chicken and Rice 🍍🍚

Ingredients:
1 pound chicken breast, cubed
1 cup pineapple, cubed
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice
2 cups chicken broth
1 tablespoon soy sauce
1 teaspoon ginger, grated
Salt and pepper to taste
1/4 cup green onions, sliced
1 tablespoon sesame seeds
Directions:
In a large skillet, heat the olive oil over medium heat. Add the chicken cubes and cook until golden brown and cooked through. Remove the chicken and set aside.
In the same skillet, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
Add the pineapple and cook for an additional 2 minutes.
Stir in the jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked through.
Return the chicken to the skillet, mix well, and heat through.
Serve garnished with green onions and sesame seeds.

2 ribeye or New York strip steaks (about 1-inch thick)
2 tbsp olive oil
Salt and black pepper, to taste
For the Cajun Shrimp:

1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 1/2 tbsp Cajun seasoning
4 cloves garlic, minced
Juice of 1 lemon
Fresh chopped parsley, for garnish
For Serving:

Lemon wedges
Grilled vegetables or a side of rice (optional)

Season the Steaks: Rub the steaks with olive oil and season generously with salt and black pepper. Let them sit at room temperature for 20-30 minutes before grilling.
